Jamacian Jerk Chicken Quesadilla

Jamaican Jerk Chicken rocks my world. It rocks my world no matter hows its served… over rice, in a salad or in a quesadilla. I think its safe to say that I love Jamaican jerk seasoning. The Jamaican Jerk seasoning is just a combination of allspice, scotch bonnet peppers to give it that extra zing, cloves, nutmeg, thyme, cinnamon and of course garlic!

Last year we went to Jamaica and came home with about 5 different blends of jerk seasoning, not to mention the best tan I had ever had in the entire world. In fact, I need to go back. Immediately. I am fairly certain I can’t get a tan that fabulous in California, so its only right that I hop on a plane and head back to Jamaica for some sunshine, jerk chicken and a Caribbean breeze cocktail or two… okay maybe more like 10.

Anyway, I digress… back to my quesadilla. I whipped up some of these this past weekend for lunch! They were especially delicious because I used my current favorite cheese… Havarti. Omg. It’s awesome. The cheese is just awesome. It is a great cheese in quesadillas because it melts like a champ… and its so creamy and delicious and perfect. Try it. Trust me.

Jamacian Jerk Chicken Quesadilla

Ingredients
  

  • 4 to rtillas
  • 1 chicken breast
  • 1 cup shredded Havarti Cheese
  • 2 tbsp Jerk Seasoning
  • 1 avocado sliced
  • 1 Mango diced
  • 1/4 red onion diced
  • 2 tbsp cilantro minced
  • 1 lime juiced
  • salt and pepper

Instructions
 

  • Place the chicken breast in a large zip lock back and using a mallet, pound the chicken until its about 1/2 inch thick. Remove from bag and spread the jerk seasoning all over both sides of the chicken. Grill over medium high heat on a grill pan for about 4 minutes on both side until done.
  • One two of the tortillas, divide the cheese in half and spread all over the tortillas. Dice the cooked chicken and place on top of the cheese. Top with the other tortillas and place onto a heated grill pan on the stove. Grill on both sides until the cheese has melted. Top with avocado.
  • In a medium sized bowl combine the mango, red onion, cilantro, lime juice, salt and pepper and combine. Scoop the mango salsa on top of the quesadillas and serve.

    I could go for some warmer weather right now!
    Guess I will have to settle for picking up a mango at the market…….

    1. I know right??!! Me too! I’m thinking of just leaving for Jamaica and stopping in the Virgin Islands and rounding out the trip with a quick visit to the DR. 🙂
