It’s Wednesday and I’m ready to rock and roll. Get ready for some Chicken Fajita Bowls!
I’ll eat fajitas every which way whether it’s at home or at a restaurant. I’ll eat chicken fajitas, steak fajitas, shrimp fajitas, fajita quesadillas… you name it. And the fact that I don’t have a fajita quesadilla on this site is completely unacceptable and needs to be remedied immediately.
Today it’s all about Chicken Fajita Bowls with steamed white rice (or cauliflower rice if you’re keeping it clean this time of year), black beans, charred corn, pico, guacamole and more! It’s perfect. Everything you’ve ever wanted. The poblano peppers in there will 100% seal the deal. And best part about it… you serve it in a bowl. Which if you’re new here, is my all time favorite way to eat anything. Bowls all day, every day.
Just a little PSA for you guys today – if you’re a member of the just for U® program at Albertsons – you might have been invited to our live cook-along class a few weeks back and if you didn’t come – YOU MISSED OUT!! It was basically a private insta-live and we had a ball! Wanted to give you guys a little update on it since a bunch of you asked via DM after I mentioned it in our Happy Hour insta-live recently!Â
Here in Los Angeles, I’ve got a Vons, Pavilions and Albertsons store right here in my neighborhood! Clearly not all of you live in LA, so you may be more familiar with your local Albertsons Companies stores like: Albertsons, Safeway, ACME Markets, Jewel-Osco, Randalls, Tom Thumb, Shaw’s, Star Market and United Supermarkets. If you’re a member of their just for U® program, you get all sorts of incredible perks like personalized discounts on the products you love, and cool experiences like this cook-along!Â
It’s pretty much the way we SHOULD do IG-live. Everyone got the shopping list ahead of time, we loaded up on their exclusive O Organics line of products and then were able to cook together Friday afternoon a few weeks ago and make dinner together! O Organics is amazing b/c its USDA certified organic, always non-GMO, and affordable….so you don’t have to spend a ton to use organic ingredients. Plus, there are more than 1,500 O Organics items across every aisle, and you can only get them at the Albertsons Companies family stores.Â
Anyways, if you’re not signed up, get on it! And check out Albertsons Companies’ delivery, DriveUp & Go™ and PickUp options to snag the ingredients for these Chicken Fajita Bowls… the chicken is this is juicy and succulent and you’re going to be so happy when you make it. The marinade has everything you could want and all the flavor is seared in when you sautĂ© it all together! Let’s do it!Â

These bowls look so nice and light, healthy and tasty!
Definitely trying these this weekend. Trying to decide what to substitute the corn with. Any ideas?
Any sauteed veggie would work or just leave it out!
This is so much more fun in a bowl. Way to jazz it up!!!
I love how fresh and delicious these bowls look!
This looks like exactly what I’m craving! Looks delicious!
Simple and delicious- everything I need in a weeknight dinner! This is one the whole family will love, for sure!
Just made these tonight and they are so good!! The marinade was just as explained. Easy, flavorful and was a perfect dinner!! Definitely one I could make for a fun night in with friends or family when they visit.
This just made my day!! XOXOX
Gaby! I’m the same way when it comes to fajitas. They are my go to when I go to my favorite local mexican restaurant (or any mexican restaurant, really). These bowls look so yummy! I love how different this is from traditional fajitas. Would be great for meal prepping lunches!
I love that my dinner decision has been made and it is going to be a WINNER!
Gaby, this recipe looks so yummy! I will definitely try it.

Yum! I’m on a keto diet for my heart. This meal is such a flavorful and fun option. And it’s easy, too. I’ll be adding it to our list of regulars. Thank you!
This was the best. Thank-you Gaby!!!!
The link to print the recipe navigates me to the home page. Has the link changed?
it’s working for me??
My pantry is full of O Organics Products and we use them on the daily.
This could be my most favorite dinner EVER!!!
That looks really good! Trader Joe’s has a really good frozen charred corn. I loved your chicken chili verde! Delicious!! Love exploring your recipes…Keeping me sane in this time of non-stop cooking. Need to try new things all the time.
Thanks so much!
Gaby, is it possible to post your recipe for your granola? If someone else has it, please post. Thanks
already on the blog https://dev.afterhoursagency.com/wgc/coconut-granola/
These were easy to make and very tasty! The teenager and husband loved them. We used riced cauliflower and also had tortillas as an option. These fajitas were awesome especially with our homemade guac!
So yum! Your guacamole is REALLY GOOD! Quick question for weeknight ease…do recommend “charring” frozen corn? It’s not in season yet here – I can’t wait for grilled corn in summer salad season!
I buy the charred frozen corn from trader joes!
Delish delish delish! Thank you for another hit!
Lovely work!! Charming one
So. dang. good. . A little prep work and time-intensive? Yep. Worth it? 100%. And don’t overlook this detail: a searing hot cast iron skillet is pretty critical to get that amazing char on your veggies and caramelization on your chicken. Don’t push the veggies and chicken around too much. Leave them alone and let them develop some color and flavor.
Easy, healthful, and yummy!
OMG so delicious…my husband couldn’t say enough good things about it.
Yum yum yum! Tried to find simple healthy dinners and this was delicious going to be a regular in this house
