I know there are pumpkin and apple things popping up all over social media – but like I said before, I’m not quite ready to let go of summer yet. This Cucumber Feta Salad has been on our menu the last few weeks while I’ve been testing it. It’s a perfect side salad for any Mediterranean dinner or serve it up as a quasi-salsa/topping on top of grilled steak, chicken or fish. It’s bright and light and briny and perfect. I made it on Sunday over a side of salmon… literally the definition of perfection.

Cucumber Feta Salad

A SUPER easy Cucumber Feta Salad that works as a side salad for basically any meal, or as a topping to grilled fish, roasted salmon, steak, etc.

Ingredients
  

  • 4 cups chopped Persian cucumbers
  • 1 shallot, thinly sliced
  • 1 avocado, peeled, pit removed, then diced
  • 1/4 cup fresh dill, finely chopped
  • 1/2 cup feta cheese, crumbled

For the Dressing

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • Kosher salt and freshly cracked black pepper to taste

Instructions
 

  • Place the cucumbers, shallot, avocado, dill and feta cheese in a large bowl.
  • Place the olive oil, red wine vinegar, lemon juice, garlic and salt and pepper in a small bowl. Whisk until combined. Pour the dressing over the vegetables and toss gently to coat. Serve.

  1. Looks delicious? How long do you think it would last in the fridge if preparing it for 1-2 people and wanting leftovers?

    1. I just made this for dinner & it’s delicious! I don’t like shallots, so I left those out. I did throw in a handful of cherry tomatoes to bulk it up a little. This will be a regular for sure! Thanks for sharing!

    I tried this recipe at the weekend, and I LOVE it! I have never tried using Dill in a salad dressing but oh its so good and fresh, brings the dish alive, especially the cucumber.

    There were no leftovers, but I have made it twice since then. Thank you for such a wonderful combination.

    I’ve made this twice now (as is) – it’s so delicious! I served it with grilled salmon both times. It’s definitely filling and you don’t need much seasoning on your protein because it’s SO flavorful.

    This salad is amazing, and tastes even better the next day. I did not have fresh dill on hand so I used some green onions from the garden. I love how the avocado gives it a creaminess that keeps me coming back for more!

    OBSESSED with this salad! This will be on repeat from now until forever. So fresh and light, yet satisfying. Could eat just a whole bowl of this for a meal!
