In just under 24 hours I will be celebrating my all time favorite holiday of the entire year. Yup, Cinco de Mayo. I even like it more than my birthday, and that is saying a lot. Because I really like my birthday. But Cinco is the only day of the entire year that I’m allowed to eat annoying large quantities of guacamole for breakfast, drink margaritas for lunch and dinner, and then eat more guacamole for dinner. Of course I’ll be stuffing my face with other amazing food like, Carnitas (with guac), Chips and Tomatillo Salsa (with guac), and Loaded Nachos (with guac)!
If you’re new here, then here’s all you really need to know about me. I’m totally obsessed with avocados. In fact, I have a super fun exciting avocado project coming up that I can’t wait to tell you about! But that’s another post for another day. Today we’re talking guacamole! I tested a few new guac recipes this week that I’ve been dreaming about and I’m so excited to share this one with you. It’s perfect for tomorrows celebration and you basically just have to make it.
Spicy Queso Fresco Guacamole
Here’s another little tid bit about me…. I’m equally as obsessed with cheese. So any chance I get, to incorporate cheese with an avocado recipe, is very exciting! This Spicy Queso Fresco Guacamole is a combination of perfectly ripe avocados, fresh lime juice, red jalapenos, queso fresco and then some salt and pepper. Simple. Easy. And awesome. I like to keep my guacamoles really clean so you can taste all the flavors and freak out like I do!
This recipe might just be my new favorite! In fact, I’m totally going to ask my caters to use this one for my late night guacamole bar at my wedding. I mean, after all that drinking and dancing, people are going to need a guacamole pick me up! Am I right? I’d like to think so 🙂
So here it is… run to the store right this very second and pick up a bag of avocados! They are probably on sale right now too since most markets stock avocados like crazy before Cinco de Mayo!
Happy Cinco de Mayo everyone!! And if you plan to have a guacamole tasting par-tay like me…. well, here are a few more guacamole recipes to wow your guests!
Spicy Queso Fresco Guacamole
Ingredients
- 3 ripe Hass avocados
- 1 red jalapeno pepper finely chopped
- 1 lime juiced
- 1/3 cup queso fresco crumbled
- salt and pepper to taste
Instructions
- Cut the avocados in half lengthwise. Remove the pit from the avocado and discard. Remove the avocado from the skin, and place the avocado flesh on a cutting board. Cut the avocado in [1/2]-inch cubes and transfer the avocado to a medium sized bowl.
- Add the jalapeño pepper, fresh lime juice and crumbled queso fresco to the bowl. Mash everything together with a fork until half chunky and half creamy. Season with salt and pepper to taste and serve immediately.
Mmm another great guacamole recipe gaby! Yum!
Another awesome avocado recipe! YESSSS.
It’s party time! I have to make this as you’re the avocado queen!
Actually, if you keep the pit (at least one!) in the guac it will prevent oxidation, keeping the avocado fresh and green – this work’s especially well if you have leftover guac you want to keep overnight!
Looks yummy! I love knowing I can count on you to broaden my guac horizons! I just made my Cinco de Mayo recipe round up list last night…might have to add this one to it!
And I was trying to decide what to do with my 2 perfectly ripe avocados! 🙂
I love how simple this is. I’m a big fan of Queso Fresco too and will admit I never thought about adding it to guac. Brilliant!
Delicious! Can’t wait to hear about the upcoming avocado project.
our shared guacamole obsession makes me love you even more…totally jealous of that late night guac bar you’re going to have at your wedding!!
I love your avocado recipes – keep them coming!!!
Ooh, great tip on getting avocados because of cinco de mayo. Thanks!
Mmm, queso fresco and avos — two of my favorite flavors in one bowl! Yay for Cinco de Mayo!
Have they not renamed this holiday Cinco de Gaby? If not why not? I love your never ending enthusiasm for all things avo – especially guac – and the addition of queso fresco has me grinning.
Of course I love this version of guacamole too. I love Lucy’s suggestion of re-naming this holiday, “Cinco de Gaby.”
Love that last photo!! I want to dive right in.
OH MAN I can’t wait to make this. I love avacado almost as much as I love my toy poodle…
LOVE the addition of queso fresco!!
I was wondering what chips you used? The guacamole lookes delicious and so do those chips 🙂 Thanks!!!
homemade tortilla chips 🙂 Should I post the recipe?
You’d definitely make my week if you did 🙂
Awesome guac post, Gaby. And yes, please do post the homemade tortilla chips!
Gaby! It’s so great to be back in the country and catching up on all your blogs for the past three months! I missed all the deliciousness while I was away, and now I’m having the best time ogling all the pictures of delicious food I want to try to make! Cinco de Mayo sounds like the perfect place to start too 🙂 It’s a good time to live in San Diego!
LOVE Cinco de Mayo! And holy moly — love guacamole and queso fresco. Will have to give this twist a try!
Mmm. love queso fresco. Will have to try this. My normal recipe is like this except for parmesan cheese for the cheese and salsa instead of the red pepper.
Oh Man, I wish I would have seen this before the weekend! 🙁 Oh well, we can still make it.
That is some really nice looking guacamole!
Hope u had a fab Cinco de Mayo ~ love the guac 🙂
Guacamole is always my go to snack! I love this take – thanks for sharing!
