In just under 24 hours I will be celebrating my all time favorite holiday of the entire year. Yup, Cinco de Mayo. I even like it more than my birthday, and that is saying a lot. Because I really like my birthday. But Cinco is the only day of the entire year that I’m allowed to eat annoying large quantities of guacamole for breakfast, drink margaritas for lunch and dinner, and then eat more guacamole for dinner. Of course I’ll be stuffing my face with other amazing food like, Carnitas (with guac), Chips and Tomatillo Salsa (with guac), and Loaded Nachos (with guac)!

If you’re new here, then here’s all you really need to know about me. I’m totally obsessed with avocados. In fact, I have a super fun exciting avocado project coming up that I can’t wait to tell you about! But that’s another post for another day. Today we’re talking guacamole! I tested a few new guac recipes this week that I’ve been dreaming about and I’m so excited to share this one with you. It’s perfect for tomorrows celebration and you basically just have to make it.

Spicy Queso Fresco Guacamole

Here’s another little tid bit about me…. I’m equally as obsessed with cheese. So any chance I get, to incorporate cheese with an avocado recipe, is very exciting! This Spicy Queso Fresco Guacamole is a combination of perfectly ripe avocados, fresh lime juice, red jalapenos, queso fresco and then some salt and pepper. Simple. Easy. And awesome. I like to keep my guacamoles really clean so you can taste all the flavors and freak out like I do!

This recipe might just be my new favorite! In fact, I’m totally going to ask my caters to use this one for my late night guacamole bar at my wedding. I mean, after all that drinking and dancing, people are going to need a guacamole pick me up! Am I right? I’d like to think so 🙂

So here it is… run to the store right this very second and pick up a bag of avocados! They are probably on sale right now too since most markets stock avocados like crazy before Cinco de Mayo!

Spicy Queso Fresco Guacamole

Ingredients
  

  • 3 ripe Hass avocados
  • 1 red jalapeno pepper finely chopped
  • 1 lime juiced
  • 1/3 cup queso fresco crumbled
  • salt and pepper to taste

Instructions
 

  • Cut the avocados in half lengthwise. Remove the pit from the avocado and discard. Remove the avocado from the skin, and place the avocado flesh on a cutting board. Cut the avocado in [1/2]-inch cubes and transfer the avocado to a medium sized bowl.
  • Add the jalapeño pepper, fresh lime juice and crumbled queso fresco to the bowl. Mash everything together with a fork until half chunky and half creamy. Season with salt and pepper to taste and serve immediately.

  1. Actually, if you keep the pit (at least one!) in the guac it will prevent oxidation, keeping the avocado fresh and green – this work’s especially well if you have leftover guac you want to keep overnight!

  7. Mmm. love queso fresco. Will have to try this. My normal recipe is like this except for parmesan cheese for the cheese and salsa instead of the red pepper.
