Guacamole Loaded Nachos

Let’s talk nachos.

I’d like to call myself somewhat of a nacho connoisseur.

You see nachos were kinda a big deal to me in high school. I had some mean nacho making skills. My friends and I would come home after school and grab a bag of tortilla strips, a hunk of colby jack cheese and then proceed to make nachos. And we didn’t just make any nachos. These were serious cheese drenched nachos. I’m talking like 3 tbsp of melted cheese to one tortilla chip. Thinking back, I guess it was a little excessive, but they were some pretty epic nachos.

These days I’m getting fancy. And by fancy, I mean I throw on a few more ingredients than just colby jack cheese. You can get all kinds of jazzy with nachos, but my personal favorite combination is re-fried beans, ground beef (from my fav local butchers Lindy and Grundy), roasted corn, salsa, scallions, loads of cheese and of course guacamole. I mean really, did you expect anything less? And then a dollop or two of sour cream. Yes, please. I’d take a plate of these any day!

With the Super Bowl coming up in a few days, I figured it was high time I share these delicious treats with you. Because let’s be honest here, you’ve gotta make these for a Super Bowl bash. I mean Super Bowl Sunday is really all about the food anyways. Do people actually watch the game? I mean, I guess I watch the commercials and the half time show, but other than that I’m hidden away in the kitchen cooking up more food or whipping up some fun cocktails!

Are you guys nacho fans?! What do you throw on top to jazz things up? And… who do you want to win the Super Bowl!!

So is there really a recipe for nachos?

Here’s my method:

On a large oven safe plate…

Layer on a thin layer of chips. Top with shredded cheese. Top with re-fried beans. Top with more chips. More cheese. Some ground beef or turkey that you’ve cooked. Corn. More Cheese. More beans. Place into the microwave or oven and melt the cheese. Once the cheese has melted, top with salsa, guacamole and sour cream. Grab some napkins and dig in!

  1. Naughty!!! Lovin’ it!!! We usually have nachos on Friday nights and let our kiddos build their own mountain of goodness with all the leftovers from the week. We like ours with shredded chicken, beans (black or pinto), pico de gallo, crema, and of course cheese…glorious cheese 😉

  2. In our house there is no such thing as nachos without being loaded with guacamole! When we find an avocado tree with a broken branch, all those avocados come into the house to ripen. This is a great way to use all that ripe fruit!

  3. I’m a little bummed about the Super Bowl, because I was hoping for a Harbaugh-bros showdown! I can’t believe neihther the 49ers or Ravens made it. 🙁 But regardless, I will still watch the game next Saturday because it’s an excuse to get together with friends and an excuse to eat some yummy “game day” snacks!
