With the Superbowl right around the corner – it only makes sense to start practicing new recipes for the big game! I don’t know about you – but the food that is devoured on Superbowl Sunday is way more important to me than the actual game. I am all about the bite sized things, like these Mini Potato Skins stuffed with cheese and guacamole!! (I mean did you really expect anything less from me – what kind of Superbowl is it without guacamole and potato skins!!!) The best part about these little treats, is that they are so easy to eat if you have your eyes glued to the TV. One bite = no mess!
Rather than using the big Russet Potatoes, I opted for the little Yellow Dutch Babies because they are the perfect size for these potato skins. I crisped up a bit of pancetta (you could also use bacon) to put under the cheese – but you can totally leave that off if you are heading the vegetarian route!
Love the idea of guac!
I love mini things…just means you can eat more per serving size 😉
is this the secret recipe for Gaby’s Guac?!
Gorgeous!! What a fab treat… I cant wait to make this!
My favorite snack is the one you just posted!
Off to the market I go!
Wow Gaby, those look fantastic!! My favorite snack is nachos, you can never go wrong with them!
who doesn’t love skins… great combo of flavors- it’s a sure winner

So I know it’s not favored to leave a comment saying, “This looks delicious” but, this looks delicious! I love the idea of guacamole. Yum! 🙂
The guac is really working for me….
Potato skins with bacon! nom nom nom
Ok, Superbowl party at your house!!! Wonderful that you got the 3 major food groups in one little snack (guacamole IS it’s own food group, right??)
Wow!! I never thought about adding the guac! I love nachos…with just about everything you can think to put on them!! Mmmm and I had the best corned beef and saurkraut balls…just wish I knew the recipe!
I’ll take one please! Touchdown!
Gaby, these are awesome! Of course if I made them I would have to eat them by my lonesome because Grumpy refuses to eat Guacamole!
I would have been disappointed if you hadn’t filled these with guacamole – I know from your tweets that you are a great lover of the green stuff. These are the perfect game day snack!
Is “Yellow Dutch Babies” the CUTEST name ever??!! I am with you – it is all about the food. I have not a clue who is playing in the “game ;)”
You created such a great idea, I’ve never thought of putting guac on tater skins! Looks delicious!
I’m with you on bite size and figer foods for the big game. I however watch every second of the game so knowing the meal game plan ahead of time is key. I love these little gems. I’ll be serving a gluten and dairy free version of these for sure. I think I’m also going to have other snacks on a stick. Don’t think these would work on a stick but that would be entertaining to watch people eat. Thanks for the great ideas!
wow, those potato skins looks delicious. will have to try!
I love those mini potatoes! They will be even better as potato skins. Thanks for the great recipe!
I just now read your guest post over at Family Fresh Cooking, and I could not wait to visit your blog to get all of the delicious recipes!
YUM!! These look soooo good! Way better than guac and chips 🙂 You have to add this recipe to this list of Super Bowl snacks > http://www.skinnyscoop.com/search/super+bowl/

“Liked” Pam Cooking Spray on FB! 🙂 (And you too!)
Quick question: Could you prep all of this ahead of time and just pop the skins back in the oven when your guests arrive and then top with the guacamole?
absolutely Kristy!! I’m all about prepping ahead of time 🙂
