There are tons of things in life that I absolutely love but to name a few… One – pizza. Two – guacamole. Three – anything involving carbs. Four – helping people in need. This post is about something that is really important to me and it involves 3 of the 4 things mentioned above! (no guacamole – sorry guys!) A few months ago I was approached to participate in a contest for Tyson Chicken and I needed to create an awesome dinner sandwich using their chicken that is simple to prepare and delicious!! What made this contest even more exciting was that, the winner of the Chicken Dinner Sandwich, would have $5,000 donated to the charity of their choice. This was really exciting to me because I am a huge believe in helping those in need and getting involved with charities!

After a few test runs in the kitchen I decided on the Tuscan Chicken Pesto Sandwich! It’s a winner – and I’ve made it with different combination numerous times in the past few months! The next decision was a bit more difficult. There are so many charities out there that need our help. Ultimately I chose The Painted Turtle which is an amazing organization that I have been fortunate to learn about through my bosses as they are supporters of this fantastic organization!

The Painted Turtle is the sixth addition to Paul Newman’s family of Hole in the Wall Camps for seriously ill children. It is also the only multi-disease camp and family care center of its kind on the West Coast. Through educational, therapeutic, safe, and just plain fun summer camp and year-round programs, The Painted Turtle provides a life-changing experience to children whose daily struggles often diminish both their desire to be well and their ability to lead a rich, productive life.

Of the more than one million children in California with chronic illnesses, The Painted Turtle needs assessment revealed that there are over 17,500 who are unable to attend summer camp due to their medical needs. The Painted Turtle provides these children and their families with an empowering, renewing experience completely free of charge.

Ingredients
  • 4 Chicken Breast Fillets
  • 8 pieces of sourdough bread
  • 1 cup pizza sauce
  • 1 cup pesto
  • 8 slices fresh Mozzarella
  • 4 large tomato slices (optional)
  • Olive oil for drizzling
Instructions
  1. Plug in a Panini Press.
  2. Prepare chicken as directed, baking at 350 degrees for 18 to 20 minutes.
  3. Take 2 pieces of bread. Slather one with pizza sauce and the other with pesto. Add the chicken on top of one of the slices. Add 2 slices of mozzarella cheese. Add a slice of tomato if desired. Top with the other piece of bread. Drizzle the top with olive oil and place into the hot Panini press. Press for 5-7 minutes until the top of the bread is golden brown.
  4. Repeat for the remaining sandwiches.

  1. Hi Gaby, love the sandwhich, appealing to grown ups and kids. And like Heather says in her comment you pretty much had me at Tuscan as well. I’d even add a little spinach to the recipe for some extra cruch.
