Mozzarella, Tomato and Pesto Pizza

PIZZA NIGHT! Tuesday are probably one of my favorite nights of the week because I can always look forward to some fabulous pizza! Tonight we opted to go vegetarian and went with a pesto pizza. This was the first pizza I made with my pizza stone. It was back long ago in college (8 months) when Mallory and I started to experiment with our pizza toppings. Therefore this pizza tonight is dedicated to her!! I came home with some fresh basil after the farmers market this weekend so I took some time to make fresh pesto.

Pesto is SO easy to make and it is infinitely better than the stuff you buy at the store.

Mozzarella, Tomato and Pesto Pizza

Ingredients
  

For Pesto

  • 1/2 cup olive oil
  • 1 cup packed of basil leaves
  • garlic
  • parmesan cheese
  • pine nuts
  • salt and pepper

For Pizza

  • 1 pizza crust
  • homemade pesto
  • fresh mozzarella
  • tomato slices
  • salt and pepper

Instructions
 

  • Stick everything into a food processor, strain in your olive oil and you have freshly made pesto!

For the Pizza

  • Then all you need to do is assemble your pizza. Use the pesto as your base, as you don't need a red sauce, then layer on your fresh mozzarella, sliced tomatoes and salt and pepper! Place your pizza into a preheated over (500 degrees) on your pizza stone and bake for 10-12 minutes! Enjoy!!
