I overdid it this weekend, I ate a burrito the size of my face, about 3 lbs of guacamole, and more tortilla chips than I care to admit! So I’m keeping this light and bright and fresh this coming week when it comes to dinner. Here we go… Week 28 coming your way.

WednesdayLoaded Greek Salads are happening today. I’m all set with this vegetarian meal, but I’ll grab a rotisserie chicken for my husband from the market so he can get a bit of protein on top!

Thursday – Clearly I’m having a major Mediterranean moment because it’s Greek Chicken for the win! And a Zucchini Carpaccio on the side!
