I am fairly confident that you all know my obsession with guacamole by this point in time. I could, and would, eat it everyday for every meal and I am certain that I would never tire of this. I am always on the lookout for new ideas that involved my beloved guacamole and this past week my boyfriend suggested that I make Irish Nachos. I have no idea where he came up with this idea – but whoever inspired it is a genius. And I love them.
They are pretty much like regular nachos but so much better because instead of using chips, you use thin slices of potatoes and then pile on the other ingredients. They are down right delicious and a total crowd pleaser… not to mention extremely budget friendly.
You start with a big plate of thinly sliced roasted potatoes
Next, pile on some sauteed vegetables…
Then, layer on some sauteed meat. I used ground turkey but you really could use any kind of meat you prefer. It would be great with ground beef, chicken, lamb or even shredded beef, pork… whatever!! It’s all going to be delicious.
Add on a big handful of cheese and then stick it back into the oven to melt it over the nachos.
Once its out of the oven for the final time, add the salsa and of course some Guacamole and call it a meal!
Irish Nachos with Guacamole
Ingredients
- 3 large red skinned potatoes scrubbed and sliced
- 1 red bell pepper sliced
- 1 yellow bell pepper sliced
- 1 yellow onion sliced
- 1/2 pound ground turkey
- salt
- pepper
- 2 tsp paprika
- 3 tsp garlic salt
- 2 tbsp olive oil
- 1 cup cheddar cheese
- 1/2 cup salsa
Instructions
- In a tart pan with a removable center, line the sliced potatoes in circles, making sure to cover as much as the bottom of the pan as possible. Season with salt, pepper, 1 tsp paprika and garlic salt and drizzle with olive oil and bake at 350 degrees for about 35 minutes. Once baked, remove from the oven and set aside.
- In a medium sized skillet drizzle olive oil to coat the pan and bring to medium high heat. Add the peppers and the onions and saute for 5 minutes. Transfer vegetable mixture on top of potatoes. Next add the ground turkey and remaining 1 tsp of paprika to the same skillet and saute until the turkey is fully cooked. Season with salt and pepper. Transfer the turkey mixture on top of the vegetables and then top with cheddar cheese.
- Put the pan back into the oven for 7 minutes until the cheese has melted.
- Once removed from the oven, top with Guacamole and Salsa and serve immediately.
In love with this recipe.
We have an Irish bar nearby that serves Irish nachos and they are out of this world delicious! Great idea and very pretty 😀
Josh will love these. He is a huge nacho fan.
Sort of like the 'loaded' potato…deconstructed which is very 'in' if you watch the food challenges .
This looks fanatstic and I sure could eat this everyday for lunch. What a brilliant idea!
Kim – so jealous that you have a bar that serves these – I would be there everyday!!!
Maria – you have to make them for Josh! They are so delicious – better yet – just come to LA and I'll make them for u. Vegetarian for the girls and Meat for the boys!
Dear Gaby,
I wanted to make these vegetarian style, so I bought meatless meatballs at Trader Joe’s and put some in a skillet , cooked and smashed them like minced hamburger and added chopped green chiles and taco sauce and cooked it down. It is a delicious ‘taco meat’ alternative. I am going to try this with your recipe!
Thank you for the Irish Nachos.
These look AMAZING! Can't wait to try out this recipe for myself!
This sounds amazing, Gaby! Being Irish we love potatoes and being in So. Cal, we love mexican food. These sound like the best of both!
These sound delicious!!!!
Just take away the jalapenos because I'm a wimp, and I think this recipe is amazing! I never thought to pile potatoes with nacho toppings, though I've put so much other stuff on potatoes. You're right — perfect game food.
This really looks fantastic. The colors are to die for. Thanks for sharing.
That looks so good! I am going to have to try it out!
wow. What a great recipe. These irish nachos look and sound amazing. Im on my way to the market and guess what were having for dinner? All your pictures are fab and make me want to cook. Thanks Gail.

After trying these for myself, I can say with confidence that they are ridiculously good. Thanks for the recipe, Gaby!
I have never heard of irish nachos and I love the idea of them. Must try- I think I would prefer these to the “normal” corn chip variety! xo
WOW, Gaby. You must work out seven days a week to keep that skinny-minny figure after digging into nachos like these! It may be morning, but I want these now!
Tonight I will be Irish!
This looks divine!
Yum and the photos are great!
You have hit a high-water mark here. My mouth is watering.
This looks seriously good, Gaby. Cheers both to your and your boyfriend for this excellent new idea! Aside from the great flavors here, I particularly like that the recipe is flexible enough to accommodate a bit of adaptation — in my case some extra boneless chicken thighs that need to be used up. I also have tomatoes and peppers in my garden now, and my neighbor has a tree-full of ripening avocados. Perfect!
Gaby this looks and sounds great. Love the idea of potatoes as I’m not only living gluten free but grain free. This will be hitting my table really soon!
I wish I had the fun last night to have the hangover this morning to go with these nachos.
this looks fantastic!! i never would have thought of this, but i love the idea.
Love your blog! And these nachos. Nice work 🙂
I for see an entire restaurant chain built around this single recipe.
umm, wow. that looks insane.
SOOOOO GOOD! Made them last night!
I think I like being Irish more and more now that I’ve seen this recipe! As if loving beer was not a good enough reason 😉
This recipe is genius! I want to whip up a batch of these nachos right now…
Oh my, that looks so so good! I may have to try this for a treat for my hubby instead of traditional chips.
Oh yumm! These looks great! Might have to make these and serve with my three green cocktails tonight (posted) …grasshoppers, irish mojitos and caramel appletinis. Thanks for sharing these. They looooooook sooooo good!
Wow! I want this for breakfast! A fabulously beautiful dish, and, uh, can you overnight it to me..? 😉
I am going to be making this next Saturday for my folks and nephew, for a snack during the college football. I don’t know if I’ll put the Guacamole on, or have it on the side, but either way, if I alter the recipe in any way, should I post my changes somewhere?
Love it!!!!!
