Two years ago today, I sat down in front of my computer, opened up a Blogger account and started What’s Gaby Cooking!! I didn’t realize it then, but it was probably one of the smartest things I have ever done. So to celebrate, I made myself this refreshing winter pomello margarita with some of the great citrus I have been getting from my farmers markets! It’s crazy to see where this blog has taken me over a two year period. Not only in terms of the actual blog, but things that happened outside of the blog because of the blog. (Does this make sense)

The blog itself, WGC, has gone through 3 serious make-overs thanks to TCDawsonDesigns – who might I add – is seriously the most fabulous designer in the world! Omg… my life would be nothing without him – he had to do some serious hand holding when I made the switch over to WordPress. Some fabulous opportunities have come my way, like filming my own cooking show on Good Bite, speaking at conferences such as BlogherFood and BlogWorld, starting the National Food Bloggers Bake Sale (which we are totally going to do again in 2011 – start baking now – its gonna be huge) and really being able to find my voice as I write this blog!

Some of the more important things that have happened since the inception of this blog are meeting some best friends of my in the world. When I started WGC, I had just moved to Los Angeles from San Francisco and left all my friends behind to move down here and start a life with my boyfriend. It was a hard transition but starting the blog and meeting people in L.A. with the same passions really made everything so much easier!! I have made some of my BEST FRIENDS through this blog who are truly the fantastic friends in the world, and I am so eternally grateful for their friendships and ability to always respond to my bizarre, and random text messages at all hours of the day! Love you guys!

And my L.A posse of gals is the most amazing team and support group ever!! I have an amazing mentor who is just that, amazing! I reconnected with my godmother through blogging and am so in love with her. And have made some fantastic friendships with people around the country that I wouldn’t have met without the blog – so many people it would take weeks to name them all.

So basically, I wanted to make this margarita not only for me (because its been one heck of a long week) but for all of you!! Blogging has been such an amazing addition to my life and I am so freaking happy to have all you fabulous readers in my life!! You make everything worth it! So thank you – and here’s to you!!! Make this margarita ASAP – it’s freaking phenomenal~!!!!

Winter Pomello Margarita

Ingredients
  

  • 1 Pomello Juiced
  • 3 Oranges Juiced
  • 1 lime Juiced
  • 3 Shots of Tequila Resposado
  • 1 Shot of triple sec
  • Ice
  • Salt
  • 1/2 tsp Agave Nectar

Instructions
 

  • Combine the Pomello juice, Orange juice, Lime juice, Tequila and Triple sec in a cocktail shaker with 1 cup of ice. Shake for 45 seconds until everything is chilled.
  • Pour cocktails into salt rimmed glasses and enjoy!
  • Makes 2-4 servings
  • Simple and Sassy Tip Before rimming the salt on the glass take a finger full of agave nectar and rub around top of glass. Then rim glass with salt. The salt sticks better and you get an added sweetness with every sip!

  2. What a great celebratory post. You are one firecracker of a woman. I’m lucky to have met you. Because, let’s be honest here, my life is so much better now that you’re in it. Your energy, sparkle, and fearlessness is a glorious thing. Soon you’ll own a big piece of the world (watch out Rachel Ray!). In the meantime, just know that you already own a big piece of my heart.

You made me believe that this bloggin business was not a waste of time and you have embraced me in a way that friends I have had for 25 years have yet to do.   6. WOW! I was just reading about Pomelos and then BAM I got your email! Talk about ESP! I am on a hunt for some this weekend to try one since I’ve never eaten one. I’ll have to try this margarita out! Great job as always!!!
