Culinary School – Week Nine – Pasta

This week at Culinary School is all about pasta, pasta, and more pasta. Did I mention pasta? The amount of carbs I consumed cannot even be described and it will take at least 72 million hours of spin class to burn them all off! Pasta is and has always been one of my favorite foods. Whether it be macaroni and cheese (yes, from the box) or some fancy designer pasta at Spago… I am a sucker for pasta. Which explains the amount of calories and carbs I consumed this week 🙂 I am sure my thighs are just loving me right now!

I will be making homemade pasta a ton in the coming weeks so I will share the recipes then, but I wanted to give you a look at what we did at school.

We made different forms of Spinach Pasta
As well as combination’s of plain pasta and spinach.

We made Wolfgang Puck’s fabulous egg pasta which just melts in your mouth!

The list goes on… we also made Lemon Pepper and Garlic Pasta, Bowties, Gnocchi, Angel hair… there was no shortage of pasta!

Not only did we made all types of pasta but we made numerous sauces as well. We made:

  • Alfredo
  • Carbonara
  • Pomodoro
  • Marinara
  • Pesto
  • Wild Mushroom Cream Sauce
  • Puttanesca
  • Clam Sauce

And then we did what any sensible person would do… we, my fabulous classmates and I, made 20 different kinds of pasta combo’s with all the different sauces as well as a slew of different veggies and toppings. Take a look… (I’ll do my best to rename and remember them all so bare with me)

Fettucini Alfredo with Panchetta and Asparagus

and that concludes our pasta extravaganza.

AND THEN WE MADE TIRAMISU!
I gained at least 10 pounds just from writing this… not to mention the 10 I gained at class. Whew…

And here is the most exciting news of the whole day, possibly the whole month… the most important day of the year is coming up in less than 2 weeks… MY BIRTHDAY!!!!!! June 1st… it’s exciting! I am going to make at least 23 cakes for each year I have been alive. 🙂

  1. Your pasta dishes look fabulous! The sauces too! I have a question. Did you use a stand mixer to mix your dough and an attachement to roll out the sheets? I made pasta over the weekend but i made it too thin. What setting do you think i should stop at? 5? I went all the way to 7 and it was way too thin.

  2. Gaby, these all look like fabulous works of art! This might force me to clean the clay out of my pasta maker and actually use it for pasta making!

  3. Michele – I used a food processor to mix the dough and then my kitchenaid attachment to roll it out. I went up to a 6 setting for the dough and it was the perfect thickness. What kind of attachment did you use?

  4. I am a pasta girl! I am loving this post. The gnocchi is my favorite. We make our own pasta at home, it is so easy and so much better!

  5. For God’s sake, Gaby, it looks like you’ve been making pasta for a month! I can’t believe you guys made this stuff in a week! I hope you post some of the recipes!

  6. I had to need to get up from my desk and get an orange – I’m not even going to show Chris this web site – I have lost 28 pounds and Chris is teetering at 25 – just looking at all that pasta makes my mouth water (you got weight watchers points on those dishes?:)

  7. Thank you for the parade of pastas! It was incredible and I might’ve gone crazy with craving if I didn’t make pasta for dinner this evening! I love the fresh noodles with herbs in them and of course, I would gladly take ANY of these plates.

    I think I gained 10lbs reading all of that too lol
