Culinary School – Week Thirteen – Classic and Contemporary Salads

After a week full of rabbit, duck and other game last week I was ready for a week filled with salads and fabulous dressings! Not only did we focus on Salads but we also did a full tasting for over 40 oils and vinegars. We tried everything from basic oils, like canola, safflower and grapeseed, to cashew, blood orange, roasted garlic and black and white truffle oil. We also tried everything from white wine vinegar to tarragon, black currant, tropicana (mango and passion fruit), and tequila lime vinegar! I now feel like my oil collection needs a complete makeover and I need to go out and buy some of these fabulously flavored oils and vinegars! But back to the salads…

Grilled Chicken Salad which is filled with avocado, orange, papaya and mango… totally delicious!

Smoked Chicken and Buffalo Mozzarella Salad – since when can I say no to anything with cheese:)

Grilled Steak Salad with Maui Onions and Cilantro Vinaigrette – this could be my new go-to dish!

  1. Goat cheese vinaigrette sounds delicious. What were your favorite oils and vinegars from the tasting?

  2. All the salads look wonderful but the steak salad has such wonderful color that I think it's my favorite. I'll probably change my mind next time through though :-). I am infirm of purpose.

  3. These are some fun salad ideas! We like to eat salads like this for light dinners in the summer!

    Megan – omg there were so many fabulous oils and vinegars… I think the basil oil was my fav… and the tequila lime vinegar was delicious!
