Pizza Night! It is one of my favorite nights of the week and this week didn’t disappoint! Tonight’s pizza was with a Spinach Pesto, Cherry Tomatoes, Chicken and Buffalo Mozzarella.
I opted to make a spinach pesto because I had bought a huge bag at the farmers market and wasn’t going to finish it all before it went bad. So I quickly blanched 3 handfuls of spinach and then drained them. It’s really important to get all the water out otherwise your pesto will be watery.

Then add the dried spinach to a food processor as well as the following
1/2 cup olive oil
1/4 cup Parmesan cheese
salt and pepper

Blend everything together and then remove the pesto into a bowl and reserve for later. Next, cut small bite sized pieces of a chicken breast and saute them in a pan until cooked through. Now you are ready to assemble your pizza.

Start with the dough and then add the spinach pesto on top. Next comes the sliced buffalo mozzarella cheese, followed by the chicken you just finished cooking and lastly a few cherry tomatoes. This goes into the 500 degree oven for about 8-10 minutes or until the cheese starts to turn golden brown and your crust is nice and puffed. Remove the pizza from the oven and enjoy!
