Culinary School – Week Five – Meat (part 2)

After a week off of culinary school for Easter we started back up this week and focused on meat! Since we weren’t doing any recipes that required long amounts of cooking time we were able to sit down and all eat at the same time rather than wrapping up most of the food and bringing it home.

Here is what we made this week…
Loin of Lamb with a Touch of Garlic and Roquefort Cream SauceIt was prepared two ways with two different types of lamb. One domestic and one from New Zealand. And how gorgeous is that Tian under the meat?

Veal and Pork Scallops with Marsala Sauce, Sauteed Garden Vegetables and Potatoes Gratin. This was by far my favorite dish of the evening… we did both veal and pork to show the different in flavor… I think they were both amazing. The Marsala sauce was to die for… and I am making it again this week for company on Wednesday night. The potatoes were baked with Gruyere Cheese, milk, cream and butter. So they definitely weren’t bikini friendly but they were delicious!

Grilled Marinated Pork Tenderloin with Warm Chipotle Salsa! ummm… so delicious and spicy! If you’re not a fan of spice then this dish probably wouldn’t be for you but it was yummy!

Pork with Apples in Port Wine Sauce. This classic French dish is served over Endive which cuts the richness of the sauce. Serve a little bread to soak up the sauce and this is fantastic!

Chocolate Souffle with Kahlua, Creme Anglaise, Chocolate Ganache and Whipped Cream. This was amazing… and if you have never had a souffle then you haven’t lived. These were light and so delicious and they will be showing up freqently in my house from now on 🙂
Such a good class and I was sufficiently stuffed after I left. Next week is fish and shellfish and I can’t wait!

  2. I know it’s a ton of food but it was so much fun… the souffle was phenomenal! and I am not a big lamb person so it was a welcomed end to the day!

  5. There was no way I’d pass a post featuring such incredible meat dishes. The lamb is our hands-down favorite but that pork is giving it a run for its money. After all that meat goodness, I may not have enough room for dessert – wait! What am I saying? There’s always room for this dessert!
