Let’s talk about Avocado, Prosciutto & Melon Salad today shall we? One might think I’ve overdosed on avocados by this point.
Not possible.
I just plan to keep going and going and going and going. Like the energizer bunny but instead of being pink, maybe I’ll turn green from all the avocados? I’ll keep you posted if that happens.
I made this salad the other day on a whim because the melon at my local market literally smelled so good while I walked through the produce section that I basically needed it in my belly immediately. Does that ever happen to you? You smell something from far away and just have to have it ASAP. This happens frequently. And it’s usually with pulled pork sandwiches. Lucky for me, this week it happened to be fruit. But being who I am, I of course had to add prosciutto and avocado because it’s the right thing to do.
While I assembled this I basically fantasized about the day when I’ll actually have a backyard where I can have all my friends over and entertain outside. I picture my backyard to look like a cross between an Anthropologie catalog and this house. Basically I just need to find a way to make 23487 million dollars in order to make that happen. So, in the meantime, I’ll just eat my Avocado, Prosciutto & Melon Salad in my apartment and pretend that I’m sitting in a super awesome rustic metal chair on my reclaimed wood table with a bazillion little flower arrangements all over the place. Kthanksbye.
No but really, this salad is kinda perfect for spring and summer entertaining. It requires no cooking. Amazing. Basically very little prep. Yes please. And it’s freaking good. So I’d highly recommend whipping this one out next time you’re tasked with bringing a salad or cooking for guests.
The saltiness from the prosciutto is like icing on the cake when you pair it with the sweet and colorful melon. I threw some avocado in there because my name is Gaby and if I didn’t something would seriously be wrong with me and you guys might begin to question my sanity. And then I scattered some chives on top because they are currently the only thing in my garden that I have yet to kill. #blackthumb
And that’s about it. I literally threw it on the table and went to town. (that’s a lie, I gently placed it on the table because it was served on one of my favorite ceramic pieces from my mama and if I broke it I would cry)
Here ya go!
Avocado, Prosciutto and Melon Salad
Ingredients
- 1 honeydew melon sliced thinly
- 1/2 cantaloupe sliced thinly
- A few springs of fresh chives cut into pieces
- A few basil leaves
- 1 teaspoon fresh lemon juice
- 3-4 ounces thinly sliced prosciutto torn into pieces
- 1 avocado cut into thin wedges
- freshly ground black pepper to taste
Instructions
- Combine the honeydew, cantaloupe, chives, basil and lemon juice in a large bowl and toss to combine.
- Arrange the fruit on a platter and drape the proscuitto over the melons and the carefully place the avocado around the top.
- Top with a few twists of some freshly cracked black pepper and serve.

I can totally sympathize on the pulled pork thing – I cooked it in my slow cooker for tacos on Sunday and I was basically going insane all day until they were ready! Love, love this salad – beautiful colors and so fresh!
This would be so satisfying sitting on that dream patio! Who am I kidding? It would be deliciously satisfying sitting anywhere!!
