Avocado, Prosciutto and Melon Salad

Ingredients

  • 1 honeydew melon sliced thinly
  • 1/2 cantaloupe sliced thinly
  • A few springs of fresh chives cut into pieces
  • A few basil leaves
  • 1 teaspoon fresh lemon juice
  • 3-4 ounces thinly sliced prosciutto torn into pieces
  • 1 avocado cut into thin wedges
  • freshly ground black pepper to taste

Instructions

  • Combine the honeydew, cantaloupe, chives, basil and lemon juice in a large bowl and toss to combine.
  • Arrange the fruit on a platter and drape the proscuitto over the melons and the carefully place the avocado around the top.
  • Top with a few twists of some freshly cracked black pepper and serve.
