This week is insane on my end! Anyone else feeling the same? We’re get ready for some very exciting new things and I need to be organized more than ever! So let’s get this weeks meal plan ironed out so the week is slightly less stressful!!
Sunday – I’m kinda feeling a Roasted Chicken tonight with a side of Mexican Corn + Quinoa Salad! That way if there are any leftovers – we can work them into lunches throughout the week!
Monday – Greek Salad with Salmon – the main course salads are coming out in full force these days and this is one of them!
Tuesday – Cauliflower Rice Veggie Bowls are on the agenda for tonight! Can’t get enough of those instant pot black beans!
Wednesday – We’re celebrating getting through hump day with this Cheesy Baked Gnocchi! It’s mostly vegetarian, leave out the pancetta if you’re veg only! Obviously it goes great with my go-to Green Monster Salad!
Thursday – Pizza Night! Duh! This week I’m going for the Bacon Brussels Pizza throw on some broccolini on the side if you want too!
Friday night in is all about these Crispy Chicken Thighs with Smashed Peas!
and some Oatmeal Chocolate Chip Cookies for your sweet tooth this week 🙂
and if you want breakfast – I’m all about the soft scramble right now! Breakfast is done in under 5 minutes flat!
I am starting the cookies NOW – so I will be able to have a couple every day this week!!
