Spicy Pomegranate Guava Margaritas

I just got back from a whirlwind trip to Austin, TX. It’s basically one of my favorite places in this country and I seriously feel like I could move there. Except for that humidity and all those mosquitoes. They got the best of me. Anyways, it was a fun filled weekend with lots of my bestest friends I’ve made from my years as a food blogger and I kinda didn’t want the weekend to ever end. But it did, and now I’m back in LA and back in the kitchen. I thought it only appropriate I share my latest margarita creation (Spicy Pomegranate Guava Margaritas) with ya after a seriously margarita-heavy weekend. Right? I think so.

Spicy Pom Guava MargaritasBefore we get to the recipe, let’s talk about birthdays. Or rather, birth-months. I don’t like to celebrate my birthday on just one day. I feel like there isn’t enough time to give proper celebration in just 24 hours? I’m partial to the birth-month celebration. I mean how can you possibly see all your friends in one day? I had a birthday just over a week ago now, and I’m still celebrating. Can’t stop/won’t stop. Until July.

So June is officially my birthday month long celebration. Perhaps one day I’ll come back down to earth and celebrate my birthday on it’s proper day, but that time hasn’t come yet so I’m just going to keep going. Can’t stop/won’t stop. All day long.

A few weeks ago I had a bunch of people over to celebrate a Absolutely Avocados and recruited one of my besties to help make these Spicy Pomegranate Guava Margaritas. Not only is Aida one of my favorite people on this planet, but she’s also equally as amazing in the kitchen, or at the bar in this case. We concocted these before everyone came over and we’ve both been making them ever since.

I’ve since added some muddled jalapeño to these cocktails because it’s summer, and adding jalapeños to cocktails is totally acceptable.

So these are now officially the cocktail of my birth month and of my cookbook. Which if you haven’t picked up, nows probably a good time with summer basically in full swing. I mean guacamole is pretty much mandatory every day, all day during the summer, don’t you think?

I’m also currently obsessing with Piedra Azul Tequila, which if you haven’t tried it, you totally should.
