Do you guys want to talk about Mexican Lasagna? Ok, great.

Let’s do it.

First of all, have you had it? It’s pretty life changing. My good friend Catherine, ofย Weelicious, just came out with her first cookbook. You may know her. Or recognize her. Her book was in my fall 2012 fav cookbook round up. (p.s. some of the winners have yet to claim their books – so hop on over and see if you so I can send you your cookbook of choice.) Anyways, today we are celebrating Catherine and her fab cookbook. And to make this an even bigger celebration, I feel like we should give away a cookbook? Whaddya think? I’m into it. Let’s go for it. Ok so Weelicious is the PERFECT book if you’ve got a family, lots of little kidlets to feed, and need fun, easy meals that the whole family can enjoy.

Growing up we always ate dinner together. And even though sometimes I wanted to ditch out on dinner and escape to the media room to go play The Sims, I really did appreciate being able to spend those 30 minutes with my fam enjoying a good meal. (quick side note. do you guys remember The Sims? basically the best computer game of all times right?! I wish I could still play it as my 26 year old self without being judged!!)ย My mom was no short order cook, so we ate whatever she wanted to make that night. And that’s what this book is all about. Each recipe works for little kids to adults and of all the recipes I’ve tried from the book so far, I’ve loved them all! Especially the Mexican Lasagna. I mean how can you go wrong with lightly toasted tortilla chips layered with shredded chicken, sour cream, cheese and salsa? It’s kind of my perfect meal.

I made the Mexican Lasagna last week when we had friends over for dinner. Every single person in the room was over 25 and guess what – we all LOVED the Mexican Lasagna. And I would be willing to bet that any child, my former picky self included, would have licked their plate clean. Good for kids. Good for adults. Everyone wins ๐Ÿ™‚

You should make this. Maybe even tonight. It’s a pretty great way to kick off the weekend and only spend a short amount of time prepping to make a kick ass meal.

Mexican Lasagna + A Giveaway

Ingredients
  

  • cooking oil spray
  • 6 small corn tortillas cut into quarters
  • 1 egg
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1 cup mild chunky salsa I used a spicy one since I don't have kids
  • 1 lb cooked shredded chicken breast
  • 4 oz cream cheese cut into 1/2 inch cubes
  • 2 tbsp chopped fresh cilantro
  • 3 scallions chopped
  • 1 tsp kosher salt
  • 2 cup shredded Mexican cheese

Instructions
 

  • Preheat the oven to 350 degrees F and spray a baking sheet with oil.
  • Place the quartered tortillas on the baking sheet and lightly spray with the oil.
  • Bake for 5 minutes and then set aside.
  • In a large bowl, whisk the egg. Add the milk, sour cream, salsa, chicken, cream cheese, cilantro, scallions and salt. Stir to combine.
  • Spray a 7x11 baking dish with oil. Arrange half of the tortillas in the dish. Spread half of the chicken mixture on top of the tortillas, then sprinkle half of the cheese on top. Repeat this for a second layer.
  • Bake, uncovered, for 35 minutes, or until the casserole is bubbling and the cheese is golden brown.

  1. Although I grew up in a house that served authentic and homemade Mexican because of my mom, my dad made my favorite dish. It was steak, rice and green peppers with a brilliant juice that made everything meld together.

  2. My favorite as a kid was our goulash, we only had it if we were in a hurry for dinner and hadnt gotten something out of the freezer to that! Still love it today!

  3. When I was a kid, my favourite food was toad in the hole -big crispy Yorkshire pudding baked with sausages in it, always with carrots, broccoli and lots of gravy! <3

  4. My favorite dish as a kid and to this day is fried matzos (matzo brei). Matzo crackers, egg, salt, and lots of butter = pure deliciousness!!!

  5. I think one of my favorites was my mom’s stuffed flank steak. She was an excellent cook, so it’s hard to choose one. My son makes Mexican Lasagna when we go to visit him and I love that too.

  6. Mum did an amazing sausage, bacon and liver casserole. Lacking any discernible table manners in my youth, I mixed the meat and veg into a huge pile with heaps of mashed potato. I’d like to think my culinary tastes have improved since then, but secretly I still long to spurn the careful presentation sometimes and return to my meaty mountain memories.

  7. My very, very favorite thing to eat when I was a kid was stewed prunes…just kidding, it was this salad my family used to make that had tuna and cheese crackers in it, really weird, I know! You don’t have to enter me in for the cookbook, ’cause I already have it, woohoo!

  8. I was a weird kid- my favorite was my grandmother’s creamed corn (fresh in the summer or from her freezer year ’round). I loved it and wish I could recreate that dish!

  9. I’m 30 years old and I still play the Sims every so often. It’s completely addicting and even more fun now with all the new improvements. None of my friends know,…your’s don’t have to either. Go play!

  10. My mom’s cheese spaghetti is easily my favorite meal. She makes it for me every time I make it out to see her. It’s one of the only things she can cook that doesn’t turn into a burnt mess!

  11. My Mom’s “Sorta-Lasagna” was my favorit – pasta, marinara sauce, spinach, sausage, and mozarella cheese chunks heated in a skillet. Easy, cheesy, and comforting!

  12. As a kid I loved hot dogs….would eat them every day if my mom let me. As an adult….not so much. But I do enjoy a hot dog from Teds when I am visiting family in Buffalo!

  13. My favorite was when my dad did a summer cookout. We’d have sliced steak sandwiches on toasted (on the grill) onion buns with Open Pit BBQ sauce. Yum!

  14. I can’t believe that I am fessing up to this, but I loved Swanson’s Fried Chicken TV dinners. We only got them when my parents went out – as a very special treat (crazy that that was considered a treat back then!) but I loved them! One year when my mom asked what I wanted for my birthday dinner, that is what I wanted. Makes me cringe to think about that now!

  15. My favorite meal growing up was swedish meatballs with white rice and a side of frozen peas! My mom made this one all the time and it still is a family favorite!

  16. Steak! Could not get enough of it when I was a kid, although it was kind of a special meal since it wasn’t a cheap dinner for our family ๐Ÿ™‚

  17. My favorite food from my childhood was my mom’s chicken noodle soup. It’s so simple, but to this day, I just crave it whenever I need a little comfort. I make a ginormous batch whenever my kiddos are sick–it always does the trick! It’s the only meal that my mom made or that I now make that NO ONE has any complaints about–all you hear is the clink of spoons against the bowl and slurps of soup being drank!

  18. Chicken & Dumplings…My grandmother made the best but I have worked and worked over the years and finally think I come close to hers. I still love it and when any of my girls are sick or need a pick-me-up, they always want chicken and dumplings. BTW – I love your blog.
