Yup. It’s true. I live off of guacamole. I eat it at least 5 times a week and its pretty much the only thing I crave on a regular basis. It’s breakfast, lunch and dinner here and I don’t think anything about that is weird. I am a walking advertisement for avocados and I’m not mad at it! Some people live by that “apple a day keeps the doctor away” saying…. just replace the word apple with avocado and you’ve pretty much got me figured out!

We stock avocados on the regular here at the What’s Gaby Cooking kitchen. There isn’t a trip to the store that’s complete without a few rock hard avocados. I’ve discussed this before in my first cookbook – but I like to buy avocados when they are ROCK HARD and then let them ripen on my counter. That way you don’t get a bruised avocado. Because let’s be honest, there’s nothing more depressing than cutting into an avocado and having it be brown and gross. No thanks.

So since we are a little over a week away from the biggest football day of the year, we’re making not one, not two but THREE kinds of guac today. Also, side note, I know absolutely nothing about football but I will celebrate game day forever because it’s an excuse to eat appetizers all day long.

Alright so here we go – there’s some chipotle guacamole, mango guacamole and traditional guacamole in your future. Get excited!

Trio of Guacamole (Chipotle, Mango, Traditional)

Ingredients
  

For the Chipotle Guacamole

  • 3 Hass avocados
  • ½ lime juiced
  • ½ lemon juiced
  • 1/3 cup Cilantro finely chopped
  • 1 Chipotle Pepper from a Chipotle in Adobo can finely chopped
  • 1 tbsp Adobo sauce
  • sea salt and pepper to taste

For the Mango Guacamole

  • 3 Hass avocados
  • ½ lime juiced
  • ½ lemon juiced
  • 1/3 cup chives finely chopped
  • 1 cup mango medium/small dice
  • sea salt and pepper to taste

For the Traditional Guacamole

  • 3 Hass avocados
  • ½ lime juiced
  • ½ lemon juiced
  • 1/3 cup chives finely chopped
  • sea salt and pepper to taste

Instructions
 

For the Chipotle Guacamole

  • Combine all ingredients in a large bowl, and mash with a fork until half smooth and half chunky. Taste and add more chipotle if desired. Adjust salt and pepper as needed.

For the Mango Guacamole

  • Combine all ingredients in a large bowl except the mango, and mash with a fork until half smooth and half chunky. Taste and fold in the mango and adjust salt and pepper as needed.

For the Traditional Guacamole

  • Combine all ingredients in a large bowl, and mash with a fork until half smooth and half chunky. Taste and adjust salt and pepper as needed.
