Culinary School – Week Eleven – Classic Desserts

Notice anything new…like my website!!! What do you think? Do you love it! We are still in the process of tweaking a few things but I couldn’t let another day go by without sharing my Culinary School Adventures from this week. Culinary school this week was all about classic desserts! It was fun to make some of the pastries that I have seen on my travels around Europe and also classic baked good that always appear around the holidays!

We made Classic Cream Puffs with Caramel Sauce. The dough is made of Pate a Choux and we piped Pastry cream into the center.

These swans were also made of the Pate a Choux and the bodies were stuffed with pastry cream and fresh berries.

Okay so its not quite Christmas but there is no reason why we can start getting ready! This Buche de Noel was simple delicious! This was made from a Sponge Sheet cake that we rolled right after taking it out of the oven and then topped with a Rum Chocolate Butter Cream and decorated with Mushroom Meringues.

I mean how freaking adorable are those mushrooms… and if you want you can eat them… all it consists of is egg whites, lemon juice and sugar!

These Profiteroles were stuffed with vanilla ice cream and topped with a homemade Chocolate Sauce… simple delicious!

We also made Cheese Puffs filled with Rosemary, Gruyere and Parmesan and a hint of Cayenne Pepper… but those disappeared so fast I wasn’t able to snap a quick pic!

    They all look fantastic, especially the classic cream puffs with caramel sauce. But the swans are soooo pretty . . .
