My love for Avocado Toast runs deep. Really deep. So deep that I created The perfect Avocado Toast recipe plus my five favorite ways to make it. When it comes to Avocados I’d consider myself an expert. Not only did I grow up eating Avocados 24/7 but I wrote an entire book on Avocados (my first cookbook Absolutely Avocados).  With that came a lot of practice creating the the best avocado toast recipe and variations.  It was a tough job – but I’m here for you! 

Before we get into my favorite variations of avo toast, let’s dive into the basics of how to make perfect avocado toast.  

How to make the perfect Avocado Toast

  1. Pick a great avocado.  There is an art with how to pick a good avocado.  I tend to buy my avocados rock hard so they can ripen on my own kitchen counter without anyone else touching them. When they are ready, they should just have the slightest give to them (check out how to cut and peel an avocado here)
  2. The bread matters.  I prefer to use something thick and grainy. More flavor and substance to hold all that beautiful avocado. 
  3. Chunky avocado vs smooth avocado… it’s really a personal decision but I prefer it mostly smooth with a few chunks. If it’s too chunky, I find that the avocado falls off and no one wants that. 
  4. MALDON MALDON MALDON….always finish your avocado toast with a sprinkling of chunky salt. It bumps up the flavor in the best possible way and adds a bit of texture.

OK now that we have the basics covered, here are my 5 favorite ways to take your avocado toast game to the next level.

Each one is delish and will make your mouth water! One is topped with tomatoes and basil vinaigrette and it’s perfect for lunch! Another is topped with Smoked Salmon and Red Onions which is kinda perfect for breakfast. As is the Avo Toast with Bacon and Eggs! I love the one topped with Goat Cheese and Chives and the other one with Pico de Gallo for a little mid-afternoon snack!

But the truth of the matter is, you really can’t go wrong with any of these, at any time of the day!

Is Avocado Toast healthy?

Sure is! Especially if you’re using a great grainy bread. And avocados are loaded with all the good fats that we need on a daily basis. So you know what they say… an avocado a day… 

What is the best way to smash an avocado?

I like to take the avocado flesh out of the skin, put it into a medium bowl and mash it with a fork. Don’t add anything into the avocado (ie; herbs) until it’s the desired consistency. 

Is Avocado good for breakfast?

Heck yes it is. It’s great for breakfast and lunch and dinner.

How long does an avocado last?

Once it’s open, it has about a 2 day life. I like to spread a little lemon or lime juice on a halved avocado if I’m saving it for the next day to reduce any browning.

How do you store avocados?

If they are NOT ripe, I store them on the counter until they are ready. Once they are ripe, I transfer them to the fridge until ready to use!

How do you get avocados to ripen faster?

Place them in a brown paper bag with either a banana or apple.  This should speed up the ripening process by a day or two.

Ingredients
  

For a Classic Avocado Toast

  • 1 piece thick cut grainy bread
  • 1/2 large ripe avocado
  • 1-2 teaspoons freshly squeezed lemon juice
  • Kosher salt and freshly cracked black pepper to taste

For the Tomato Basil Toast

Avocado Toast with Smoked Salmon and Red Onions

  • 2 thin sliced smoked salmon
  • 2 tablespoons thinly sliced red onions

Avocado Toast with Bacon and Eggs

  • 1 egg, scrambled
  • 1-2 pieces crispy bacon

Avocado Toast with Goat Cheese and Chives

  • 2 tablespoons goat cheese, crumbled
  • 1 teaspoon freshly snipped chives

Avocado Toast with Pico de Gallo

  • 1/4 cup pico de gallo

Instructions
 

For a Classic Avocado Toast

  • Toast the piece of bread until the bread is just golden brown, about 2-3 minutes depending on the thickness of the bread.
  • For the halved avocado, remove the pit from the avocado and discard. Remove the avocado from the skin and place the avocado flesh into a medium bowl and mash it with a fork and a squeeze of the fresh lemon juice. Season with salt and pepper as needed.
  • Slater the mashed avocado on top of the toast. Add more salt and pepper is desired and serve immediately.

For the Tomato Basil Toast

  • Toss together the tomatoes and basil vinaigrette in a small bowl. Pile on top of the avocado toast and serve.

Avocado Toast with Smoked Salmon and Red Onions

  • Lay the smoked salmon on top of the avocado toast, followed by the red onions and serve.

Avocado Toast with Bacon and Eggs

  • Transfer the scrambled eggs on top of the avocado toast and add the bacon.

Avocado Toast with Goat Cheese and Chives

  • Sprinkle the goat cheese and chives on top of the avocado toast and serve.

Avocado Toast with Pico de Gallo

  • Sprinkle the pico de gallo on top of the avocado toast and serve.

    My pet peeve about avocado toast is when the avocado is cold from being in the fridge! Warm toast and egg with cold avocado is nasty! Any tricks on bringing it to room temp quickly? I’ve see many a restaurant fail on this one.

    1. honestly, I’d just take the avocado out of the fridge the night before you plan on making avo toast! there is no great way to heat up an avocado rather than just letting it come to room temp on its own

  3. I can relate to ur love for avocados. I live in the beautiful island of Guam n I just ate my first avocado I toast for the season. I don’t ever buy them cause I have 5 kinds of trees in my yard.

  6. Do you ever make avocado toast for a group and need to make it in advance? Any suggestions for doing that?

    1. it’s tough to do because the toast gets soggy and the avocado can brown – so usually I just make right before serving and prep all the ingredients ahead of time so its easy to execute!
