Thanksgiving is tomorrow. TOMORROW PEOPLE. It’s the ultimate food holiday. The best day to get your food coma face on. The day where it’s acceptable to unbutton your pants at the dinner table and let it all hang out. Or, you just go to dinner in yoga pants. I’m doing it. It’s the cool thing to do.

So once all the feasting is over, and you’ve had 3 pieces of pie and 2 servings of apple crisp, you’ve got to deal with the leftovers. Well, I’ve got ya covered. These Arugula Pesto Turkey Tartines are a fun combo between a Turkey Sandwich and a Caprese Panini with homemade ARUGULA PESTO. It’s bananas. And I’ve rounded up 10 of my other favorite Thanksgiving Leftover Recipes! So you’ve basically covered no matter what you have left after the feast.
Side note – leftovers usually last for about 3-4 days! Any longer than that and things start getting a little funky, so make a tartine and power through the rest of these recipes so we can start BAKING CHRISTMAS COOKIES!!!!!

10 Thanksgiving Leftover Recipes + Arugula Pesto Turkey Tartine
Ingredients
For the tartines
- 2 pieces thick cut bread
- 1/2 lb leftover roasted turkey sliced
- 1/2 cup arugula pesto recipe below
- 8 ounces fresh mozzarella sliced
- handful of fresh arugula
- Kosher salt and freshly cracked black pepper to taste
For the arugula pesto
- 4 cups packed fresh arugula
- 1 cup packed fresh basil
- 1 tablespoon minced garlic
- Kosher salt and freshly cracked black pepper to taste
- 3/4 cup olive oil
Instructions
For the tartines
- Turn the oven on broil.
- Toast the 2 pieces of bread until the bread is just golden brown.
- Slather 1/4 cup of the arugula pesto on the top of each piece of toast and add the sliced turkey and fresh mozzarella. Season with salt and pepper. Place the 2 tartines into the oven and broil for 1-2 minutes until the cheese just starts to melt and bubbly. Remove from the oven and top with some fresh arugula. Serve immediately.
For the arugula pesto
- Combine everything in a blender or food processor and pulse for 1-2 minutes until blended.

I was eager to find some soup recipes as I only have one good recipe for avocado soup. But I could not find one! Couldn´t find from your website either. I would love to read your version of a avocado soup! : )
We do have avocados all year round here, but as we are “a bit” off the avocado farms the avocados tend to be rock hard when I buy them.
Great idea to write a book of this lovely ingredient!
