In a normal year, I’d tell you to skip the Valentine’s Day pre-fixe menus but I’m going to guess that’s already the plan for most of us this year so let’s get right into the menus! I’m all about staying in, cooking dinner together and celebrating Valentine’s Day at home (preferably in pajamas)! So in an effort to help make sure everyone has an epic night, a few Valentine’s Day Menu options are below!
Menu #1 – if you guys are surf and turf lovers…
T-Bone Steak for 2, Lobster Risotto, Avocado Citrus and Fennel Salad, and a RosƩ Spritz
Menu #2 – if you’re feeling a more vegetarian vibe…
Eggplant Rollatini with Parmesan RisottoĀ and aĀ Shredded Brussels Sprouts Salad!
Menu #3 –Ā if you want to go the fish route…
Herb Crusted Roasted Salmon, Spicy Garlic Green Beans, and a Roasted Carrot Salad
Menu #4 – if you’re obsessed with pasta…
Butternut Squash PastaĀ (add some of these shrimp if you want), a side of sautĆ©ed Brussels SproutsĀ and a Farmers Market Salad.
Menu #5 and the one nearest and dearest to my heart….
Chicken Parmesan and a Green Monster Salad! Add some pasta with the chicken if you want too!
And let’s not forget desserts! You’re for sure going to need one of these:
S’more Pudding PieĀ – one of the very best things I’ve ever made!
Caramel BrowniesĀ – super simple but SO addictive. Try stopping after just one.
Chocolate Peanut Butter Swirl TartĀ – OMG. Game changer.

Most of your recipes are for families. This is a good thing BUT many singles and couples follow as well.
When I see a 9 x 13 pan I know I need to cut it in 3rds or 4ths. Iāve see recipes that do this for you.
Is this something you could incorporate in yours? Even 1/2?

I wonder if you ever thought to make the entire recipe and instead of cooking it all , first divide it into 2 dishes, one to cook that day and another into maybe a disposable foil baking container you Can freeze to make later? I realize that you could not do this on every dish without taking all your freezer space but maybe on just the extra large recipes.
