Do you guys want to talk about Mexican Lasagna? Ok, great.

Let’s do it.

First of all, have you had it? It’s pretty life changing. My good friend Catherine, of Weelicious, just came out with her first cookbook. You may know her. Or recognize her. Her book was in my fall 2012 fav cookbook round up. (p.s. some of the winners have yet to claim their books – so hop on over and see if you so I can send you your cookbook of choice.) Anyways, today we are celebrating Catherine and her fab cookbook. And to make this an even bigger celebration, I feel like we should give away a cookbook? Whaddya think? I’m into it. Let’s go for it. Ok so Weelicious is the PERFECT book if you’ve got a family, lots of little kidlets to feed, and need fun, easy meals that the whole family can enjoy.

Growing up we always ate dinner together. And even though sometimes I wanted to ditch out on dinner and escape to the media room to go play The Sims, I really did appreciate being able to spend those 30 minutes with my fam enjoying a good meal. (quick side note. do you guys remember The Sims? basically the best computer game of all times right?! I wish I could still play it as my 26 year old self without being judged!!) My mom was no short order cook, so we ate whatever she wanted to make that night. And that’s what this book is all about. Each recipe works for little kids to adults and of all the recipes I’ve tried from the book so far, I’ve loved them all! Especially the Mexican Lasagna. I mean how can you go wrong with lightly toasted tortilla chips layered with shredded chicken, sour cream, cheese and salsa? It’s kind of my perfect meal.

I made the Mexican Lasagna last week when we had friends over for dinner. Every single person in the room was over 25 and guess what – we all LOVED the Mexican Lasagna. And I would be willing to bet that any child, my former picky self included, would have licked their plate clean. Good for kids. Good for adults. Everyone wins 🙂

You should make this. Maybe even tonight. It’s a pretty great way to kick off the weekend and only spend a short amount of time prepping to make a kick ass meal.

Mexican Lasagna + A Giveaway

Ingredients
  

  • cooking oil spray
  • 6 small corn tortillas cut into quarters
  • 1 egg
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1 cup mild chunky salsa I used a spicy one since I don't have kids
  • 1 lb cooked shredded chicken breast
  • 4 oz cream cheese cut into 1/2 inch cubes
  • 2 tbsp chopped fresh cilantro
  • 3 scallions chopped
  • 1 tsp kosher salt
  • 2 cup shredded Mexican cheese

Instructions
 

  • Preheat the oven to 350 degrees F and spray a baking sheet with oil.
  • Place the quartered tortillas on the baking sheet and lightly spray with the oil.
  • Bake for 5 minutes and then set aside.
  • In a large bowl, whisk the egg. Add the milk, sour cream, salsa, chicken, cream cheese, cilantro, scallions and salt. Stir to combine.
  • Spray a 7x11 baking dish with oil. Arrange half of the tortillas in the dish. Spread half of the chicken mixture on top of the tortillas, then sprinkle half of the cheese on top. Repeat this for a second layer.
  • Bake, uncovered, for 35 minutes, or until the casserole is bubbling and the cheese is golden brown.

  1. Roast Beef…..Mom made gravy that you could drink, I swear. Usually on Sunday, with all the trimmings, and everyone, plus a few extra, around the table…miss it!

I’d have to say my Daddy’s BBQ chicken, he made up his own sauce, all I can remember is he used pickle juice not even sure if it was dill or sweet, he made up a huge batch every year for the “Plate Dinner” that the American Legion had. He never told anyone how he made it up, he passed away without passing the recipe on.

  3. I loved eating this strange casserole my mom made with broccoli, shell noodles, parmesan cheese, and SPAM! Ridiculous, but tasty!

  4. I may be alone in this because it was a family “recipe” — but as a kid, and still today, I could eat “Tomato and Noodle” every single day. I even requested it the morning my little sister was born as my godparents babysat for us! Tomato and noodle is about as easy as it gets: boil and drain noodles, put them back in the pot. Add tomato juice (NOT soup or paste, gotta be juice), salt, and pepper. Heat, and eat. Voila! 🙂

  5. My fav was the soup from the oyster stew my Mom used to make. I didn’t eat the oysters, but the stew itself was delicious with those little oyster crackers. Yum!

  6. Kind of weird, but I loooooved when my dad would make mac and cheese with cream of mushroom and tuna fish. Holy yum!

  7. My mom made dinner every night and it was always wonderful. The times she made Cincinnati Chili sticks out in my mind. It was so good and we got to assemble the dish ourselves, adding the spaghetti, meat, cheese and beans!

  8. I loved eating my mom’s meatloaf! There was something about it that just made it such a comfort food. I can’t seem to replicate it, but I still love eating it!

  9. I’m from Louisiana, where red beans and rice are a Monday meal tradition. I have always loved this dish ever since I was very little, and my mom still cooks it for me any time I visit her!

  10. I don’t even know if this counts but my favorite meal was thanksgiving. It was always at our house and my grandma, my aunt & uncle and cousins would come…sometimes a friend would be there…all of those good casseroles and my moms homemade yeast rolls!

  11. My favorite thing was the buttery grilled cheese sandwiches my Mom would make. So simple but mine never tasted as good.

  12. Quick question: is the “1 c milk salsa” a typo? I’m assuming you just mean ‘1 c chunky salsa”? Unless there is something out there I don’t know about… =)

    Swedish meatballs was a favorite for me growing up. We only had it around the holidays but I looked forward to it every year!

  13. I loved so many things my Mom made growing up, but I think Turkey Jambalaya was probably my favorite. I make it often for my own family now with a few healthier modifications as a yummy comfort meal.

  14. Having been raised in Latin America and Cuba, (diplomat’s kid) I was lucky to get to eat tons of fabulous food! Cuban Roast Pork with Black Beans and Rice was one of my favorites. But, because it was hard for us to get American food overseas as everything had to be flown in, one of my favorite things to eat was white bread smeared with Kraft Mayo with fresh squeezed lemon juice and salt on it. Weird, I know. But my personal favorite at the time! Love your site!

  15. My Mom’s cinnamon rolls were my favorite thing to eat. I could smell them baking several houses away as I walked home from school-it’s one of my favorite memories.

  16. I loved chicken casserole with rice. The chicken was cooked until it fell off the bone, and then it was mixed with a roux and rice. Finally, the concoction was baked until crispy on top. The thought of it even makes me swoon!

  17. My favorite was always the homemade biscuits and sausage gravy. My Grandpa taught me to make it and nothing store bought even compares!
