Sunday – Eggplant Rollatini – obsessed with this recipe. And it’s even better as leftovers. Pairing it with the Shredded Brussels Sprouts Salad
Monday – Broccoli Cheddar Soup is on deck for today. With cheese puff pastry straws too!
Tuesday – my childhood favorite Schinkennudeln! That’s just the German way of saying Ham and Cheese pasta. OMG literally would beg my mom for this on a daily basis.
Wednesday we’re making another soup! 2 soups in 1 week, bring it on! This curry lentil soup with Homemade Naan is happening!
Thursday is all about these Pizza Rolls!
Friday – we’re having a dinner party and I’m rocking my most recent Roasted Chicken Dinner menu for sure!
Saturday – we’re doing this Sausage and Leek Pasta and OMG you guys it’s truly a perfect meal!
For breakfasts: I made a batch of granola bars for the week since it’s going to be a little crazy and they are easy to grab on the go.
And for desserts: CHEESECAKE BROWNIES. Enough said.

I made the rigatoni with the vodka sauce last night and it was delicious. I didn’t put in the ground chicken but used turkey meatballs instead. I loved the heat of the dish and the creaminess.. I fixed it for company, which I never seem to make pasta for company and they loved it. I will definitely make it again. Thank you.
