What is a Pizookie?

Imagine a mega chocolate chip cookie baked in a cast iron skillet and then served with ice cream on top.  Pizza + Cookie = Pizookie.

Where did the Pizookie come from?

As a child growing up in Tucson there was a restaurant called Oreganos we used to always go to that claimed to be the inventor of the pizza cookie! Technically they did not call it a Pizookie.  BJ’s Restaurant and Bar I believe came up with the name Pizookie and has made it famous through their restaurant chain nation wide.

How to make Pizookie at home?

It’s very simple – cookie dough, a skillet, and some ice cream.  But in order to make the best Pizookie I suggest using my fav chocolate chip cookie recipe and voila! Game time.

Take your cookie dough (pre bought or homemade) and transfer to a skillet, spread evenly and bake in the oven at 350 degrees for 22-24 min.  (Full directions down below).  Top with ice cream and you are set.

How to serve a Pizookie?

It’s best served straight out of the skillet with 4-5 forks for you and your friends so everyone can go to town.  You can also eat it on your own, something I may or may not have done on more than one occasion.

The ultimate tip for making Pizookie at a moments notice:

Have you ever thrown a dinner party and just did not have the time to make dessert? Have you ever craved something sweet after dinner on a Wednesday but did not feel like taking the time to bake something off and deal with the messy dishes?

If so, this tip is about to be a game changer.  The concept is simple.  The next time you are making cookies, make an extra batch of cookie dough and freeze it.  I always have a batch of cookie dough sitting in my freezer ready to go.  This way, you can easily thaw the frozen cookie dough and bake off a batch of cookies without the mess, or MAKE A PIZOOKIE without all the dishes of making the cookie dough, something I have been known to do from time to time.

It's very simple – cookie dough, a skillet, and some ice cream. Game time.
Prep Time 10 mins
Cook Time 25 mins
Total Time 35 mins
Course Dessert
Cuisine American
Servings 8 people

Ingredients

  • 1/2 cup butter
  • 1 cup dark brown sugar
  • 2 teaspoons vanilla extract
  • 1 egg
  • 1 cup all purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon baking soda
  • 1/2 cup semi-sweet chocolate chips
  • Vanilla Ice Cream

Instructions

  • Preheat oven to 350 degrees.
  • In a microwave safe bowl melt the butter and transfer into a mixing bowl.
  • Add the brown sugar and whisk to combine. Add the vanilla and egg and continue to whisk until totally incorporated.
  • Add the flour, baking powder, salt, and baking soda to the wet ingredients and mix until fully combined. Add the chocolate chips and mix to combine.
  • Spray a medium sized skillet with baking spray. Transfer the batter into the skillet and spread it evenly. Bake for 22-24 minutes until just still slightly gooey in the middle and golden around the edges. Remove from the oven and let rest for a few minutes before topping with scoops of ice cream and serving. It’s 100% meant to be eaten right out of the skillet.

  1. Nice plate to share..just dig in ! I often make combination of two different recipes and mostly it works well. This looooks gooood!

  2. This looks otherworldly. Question: Would it be possible to make the dough in advance (8-10 hours before) and leave it in the fridge, then pop it into the skillet before baking? Or will this effect the outcome and delicious gooey-ness it’s known for? Thank you!!

    1. Should works, but you might want to let the dought back to room temperature before to bake it…

  3. I finally made this pizookie and it was so delicious. Me and my husband finished it soooo fast! now we’re in cookie coma! Thank you!!

  4. I made this last night! So good and a huge success. I already passed along your link to my friends because they loved it. I wish I would have taken a better picture before we engaged these. I made personal cupcake size.

    1. Hi Rosie,

Did you use a cupcake pan and if so, did you adjust the baking time? Thank you & Happy New Year!

  5. This was amazing. Crispy bits on the outside and ooey-gooey in the middle. I may never buy another cookie in my life.

  6. Could I make this in another pan if I don’t have an iron skillet? I was thinking about a pie dish or a 9″ round cake pan? Wondering if the thickness matters.

  7. If I cooked this in a large “cookie sheet” pan (with raised edges) how long do you think I should let it cook? Same? Less? Thanks!!

    1. I haven’t tested it in a cookie sheet so I’m not entirely sure! I’d just bake it until it’s just golden brown on the edges

  8. I have to say, I found this way too sweet! I don’t know why it didn’t occur to me before that 1 cup of sugar is excessive. I would use this recipe again but would cut the sugar for sure. Especially if you want to serve it with ice cream.

    1. I haven’t tested it that way but if it has the same temperature settings, I don’t see why it wouldn’t work!

It was too sweet for me so I recommend putting like 1/4 cup of sugar. But that’s up to taste, everything else was good though

  10. Can I make the dough ahead of time? Trying to make this for husbands bday and want to make before dinner then pop in oven. Thoughts?

  12. What should I do if I only have a 12” cast iron skillet? Wanna make it for my birthday with limited pantry ingredients!

I LOVE this recipe SO MUCH!!!! I’ve lost count how many times I’ve made this! I double it and make it in my 12 inch cast iron and it never lasts longer than 12 hours.

This looks Awesome ! I wonder if you know of any “Soy free” chocolate I could buy? I have a food sensitivity to soy & was hoping I could get a workaround for this great recipe. Carob also has soy so I’ve run out of ideas. Thanks

    1. I don’t but if i find or hear of anything, I will let you know and update this post as a resource

  15. Hi Gaby!

I only have 10 and 12″ skillets. Are they too big for this recipe?

    Thanks!

  16. Hi Gaby, if you’re using store bought or any tried and true cookie recipe, about how much dough would you use for a 9-inch pan? If easier, how high up should the raw dough come?

  17. This is a very unique recipe that you have shared with us in this article. I wasn’t aware of what a pizookie was. It really looks amazing I will definitely make this recipe when I have guests at my house for a special occasion. I am sure all will this amazing dish. Thank you.

    1. yes as long as the temp is the same as the recipe calls for. Too hot and it will burn / wont cook evenly

  18. Hi Gaby!

Which recipe works best for a 10-in skillet? You have a link to your favorite chocolate chip cookie recipe, but the ingredients are in different quantities than the ones shown for the Pizookie and you show weights in the fav recipe and cup measurements in the other. Making this for my daughter’s birthday on Thursday. Thanks!!

    1. you could 1 1/2 the recipe for sure. Bake time – I’d increase by 10 minutes max but keep your eyes on it
