Grilled Guacmole? Ummmm. Heck yes!! I made this recently for Tasty Kitchen and it was gooooood. You need to make it. Immediately. It’s life changing. And then throw some rice chips with it and call it a meal…

And… wanna hear something really exciting. We’re totally having a guacamole bar at our wedding this summer. Yup. It’s happening. A late night guacamole bar with freshly fried chips. Perfect for the late night snackers and people who are going to dance the night away. I mean, we’ve gotta keep out energy up for the giant dance party. A guacamole bar is certainly the most perfect way to do that.

Okay….here’s the step by step for Grilled Guacamole:

You need to prepare either your indoor or outdoor grill. Seeing as how it’s winter in Los Angeles and I freeze outside when it’s anything less than 50 degrees, I opted for my indoor grill. Place the avocados on the grill and let them get some black marks on the bottom.

Once the avocados have some grill marks, throw a few slices of red onion on the grill to char.

Next up, let’s grill some tomato quarters!

Once we’ve got everything grilled and set aside, place the avocado into a bowl and give it a quick mash.

Next, grate some garlic over the avocado.

Be sure to get all that fabulous garlic from the bottom side of your grater.

Next, juice a lime or two over the avocado.

Add the chopped red onion.

And then the tomatoes!

Throw in some chopped cilantro. Feel free to toss in some chopped chives if you want, too! They’re the best!

Season the guac with some salt and a few turns of freshly cracked black pepper.

And serve it up with some of your favorite chips!!

  1. Can’t believe I haven’t tried grilling the avocados before making the guacamole….but I don’t have that cute little indoor grill either! We’ll have to try it, now that the new crop of Fuertes are ready to pick! Isn’t is almost time for your annual avocado-picking visit?

  2. Wow, I’ve never tried to grill avocados before, even though I live in SoCal, really close to the “Avocado Highway!” Clearly I need to rekindle my SoCal-ness and make this ASAP!

  4. Wonderful! I have lived in SoCal all my life and eat avacados everyday, never thought about grilling them, it brilliant!!! I halved the avacados and grilled them in the skin, then just scooped them out, it was bit easier. What a fantastic recipe….many thanks.
