Goat Cheese Guacamole

A very exciting thing happened to me this past week at the farmers market. I was casually strolling along on my way to the “avocado man” ready to go pick up my weekly 10 avocados, and when I got there he surprised me with the Bacon avocado!!! I’ve been bugging him for weeks now, asking when the Bacon avocados were coming. I just needed them. I needed to make new guacamole creations and the bacon avocado was exactly what I was waiting for. The bacon avocado is slightly different than the Hass (which is what we normally see in the market) in that it is more creamy and the peel is super thin. Pretty much it’s amazing, and it makes a kick ass guacamole!

Since its been in the 70’s here in L.A, I’ve been feeling very springy and wanted to make a light and tangy guacamole. I thought goat cheese would be a perfect addition to my favorite food of all times, and it turns out that goat cheese in guacamole is pretty life changing and delicious. Throw in a handful of fresh chives and you have one heck of an appetizer. Or in my case you have a big bowl of guacamole that you eat with a spoon and don’t share with a single soul. The goat cheese brings that extra bit of tang and the chives give it a little more texture plus that amazing chive taste!

Goat Cheese Guacamole

Ingredients
  

  • 3 Bacon avocados
  • 1 Meyer Lemons juiced (a regular lemon can easily be substituted if Meyer Lemons aren't available)
  • 1/3 cup chives finely chopped
  • 1/4 cup Goat Cheese crumbled
  • sea salt and pepper to taste

Instructions
 

  • Combine all ingredients in a large bowl, except the goat cheese, and mash with a fork until half smooth and half chunky. Toss the goat cheese in at the end and serve.

  2. Awesome! I love the idea of adding goat cheese . . . and I didn’t know what a bacon avocado was before today, so thanks! =) Avocados are one of my favorite foods period, so I’ll have to try this other kind.

  5. Oh, this looks absolutely delish! Don’t know when we’ll be seeing the bacon avocados again out here in Colorado (hopefully soon, as my blog cohort and I love them), but I’ll be trying this even without the bacon avocados. Hopefully my imagination will be able to conjure the right flavor. 😉 In our group, anything with avocados gets a “Yes, Please!” and adding goat cheese to it, well, that’ll just be the icing on the cake… well, you know what I mean!

  6. How have I never made this before?! Avocados and goat cheese are two of my favorite foods, and combining them together is a genius idea. I MUST make this.
