Happy Monday!! I hope everyone had a fabulous weekend! We’re starting things off here at What’s Gaby Cooking with a bang this week! A incredible recipe for Crab Cakes with a Tomatillo Avocado Salsa and a cheerful video. Get excited guys – this one is awesome!) So let’s get started. Crab Cakes are easily one of my favorite little indulgences. Pair them with some kind of salsa involving Avocados and you’ve got a winning combination.

For these crab cakes we are going to use lump crab meat. After a recent trip to New Orleans, I finally feel confident in my de-shelling and crab cleaning skills – but if you want to pick up some lump crab meat from your local market, go right ahead. It certainly makes life easier. I’m always super careful when mixing the ingredients together because I don’t want to break up the big juicy pieces of crab. So treat your crab delicately so that when it’s time to take your first bite, you’ll get lots of big pieces of crab in every bite.

The tomatillo avocado salsa that pairs with these crab cakes is literally my favorite condiment of all times. It takes almost no time at all to make, just throw everything in a food processor and away you go. You can add different amounts of heat depending on what you prefer but this salsa is always a winner for me. Tomatillos can sometimes be a little tart so the addition of honey and the California Avocado really smooth out the flavor and make this salsa totally obsession worthy! And, maybe if you’re really lucky, there will be leftover salsa and you can smother it on some nachos, grilled chicken or steak or perhaps in a breakfast burrito.

Crab Cakes with Tomatillo California Avocado Salsa + a Giveaway

Ingredients
  

  • 1/3 cup green onions chopped
  • 1/4 cup mayo
  • 2 large eggs
  • 1 tbsp finely chopped fresh chives
  • 1 tbsp finely chopped fresh cilantro
  • 1 tbsp finely grated lemon peel
  • 1 tbsp fresh lemon juice
  • 1 cup panko
  • 2 tsp salt
  • 2 tsp pepper
  • 1 pound lump crabmeat
  • 6 tbsp butter
  • 1 Avocado
  • zest and juice of 1 lime
  • 1 tsp honey
  • 1/4 cup cilantro
  • 1/4 cup white onion diced
  • 4 medium Tomatillos halved and roasted

Instructions
 

  • Stir together first 8 ingredients in large bowl and season with 1 tsp of salt and 1 tsp of pepper.
  • Add in crab meat and carefully combine with your hands, making sure not to break up the lump pieces of crab.
  • Form into bite sized cakes with your hands.
  • Saute in a saute pan with butter, over medium high heat, for 2 minutes on each side until golden brown. Set aside until ready to serve.
  • Combine the avocado, lime juice, lime zest, honey, cilantro, onion and roasted tomatillos in a food processor. Blend until fully incorporated. Serve with crab cakes.

    As for all of those avocados, there would have to be some serious Mexican cooking on the agenda.

  2. I would make guacamole as well as add the avocado to a big bowl of fresh tomatoes & corn straight off the cob! YUM!

  4. Honestly, avocados are so delicious you can just eat them by themselves! But of course, with all of those avocados, I’d have to make some delicious guacamole!

  5. I made your Tomatillo Avocado Salsa tonight for dinner and it is SO good! If I won more avocado’s I would make it again right away! Hahahaha. I didn’t make the crab cakes but instead served the salsa with homemade burritos. Also….the tomatillos were straight from my garden! Thanks!

  6. Crab cakes are my new obsession! I love them. If I won, I would make the avocados to make a lot of guacamole, and use them in my tacos…yum!

  7. I’m doing the avocado dance right now. If I won that glorious, glorious basket, I would first and foremost make copious amounts of guacamole, and probably eat it for every meal. I’d keep some of ’em whole and add avocado slices to my turkey sandwiches to jazz up sad office lunches. And any leftovers would be a great topping for my salads! Oh, avocado, how I love thee.

  8. I would have an avocado feast!! I’d definitely make lots of guacamole for taco night and I’d also use some to make an avocado smoothie!

  9. I would absolutely make sandwiches, salads and use it on my toast instead of butter. Another thing I might use it to make my hair shiny!

  10. I would make an intense amount of guac, dice some up on a balsamic marinated chicken salad, slice some up for a grilled panini sandwich and try homemade avocado ice cream:)

  12. I can pretty much add avocados to anything. There are always 1 or 2 in the fridge. For a spur of the moment choice, I’ll add them to a BLT with some ripe summer tomatoes.

  13. Guacamole would be #1 on the list to make, but truth to tell I just plain like eating avocado with a spoon right from the shell. In addition, my four grandchildren ages 5 to 12 have been avocado eaters from the time they first ate solids and sharing with them would be a great joy for me. As for the crabcake recipe, I am making that for dinner this evening – it looks and sounds simply marvellous – thanks a lot.

  14. I would use them on sandwiches instead of mayo with my fav being veggie turkey burgers on a bun spread with the avocado, cheese and some fresh salad type veggies, yum.

  18. We seriously aim to find a way to incorporate avocado into every meal… fish tacos? serve with avocado. Turkey burgers? top with avocado. Quinoa? mix in avocado. Eggs & Toast? add guacomole. Salmon? avocado-mango salsa. YUM!!!

  19. We love avocados so they would be gone in a flash. Guacamole may be our favorite thing to do with them, but I love sliced avocados on BLT’s or sliced chicken sandwiches.

  22. I would make avocado eggrolls, chocolate-avocado cupcakes, salmon-avocado eggs benedict, chicken tortilla soup, and crab-avocado-roasted corn-sweet pepper-black bean and cilantro salad. mmmm.

  24. I’m Italian and I live in California, for me the best recipes is Bruschetta with Guacamole and fresh vegetables. Toasted bread with guacamole, cubed feta cheese and diced vegetables like, red onion, tomatoes, red peppers and a drizzled of extra virgin olive oil.This lovely dish is best served with a chilled Prosecco.

  25. First, an avocado/cucumber facial …. then guac …. then guac with sardines on rye crackers … then avocado slices over scrambled eggs with lox …. then avocado/banana smoothie …. then go to the store for more avocados after I rinse my face. Repeat.

  26. If I won the avocados giveaway, I would make lots and lots of guacamole dip. I LOVE it! I would have it on my sandwiches and in salads. It would become a daily intake in our house. I even make the avocado ice cream recipe I seen!

  27. Since I moved back to California, I’ve been on a avocado kick. I’ve been thinking of a creamy gazpacho that is largely based on avocados. And just this week I’m planning to make a charred corn and avocado salad/salsa for tacos. Also, avocado shakes, just like I used to get at Cafe Brazil in Santa Cruz. Oh, and my favorite afternoon snack is an avocado smeared on a rye crisp. Mmm. Avos.

  28. I adore avocados and I eat them any and every way, but one of my most favorite ways is to use them in sandwiches (especially in BLTs)! They add so much flavor and creamy texture that it’s hard to imagine eating a sandwich without them!
