Happy Monday!! I hope everyone had a fabulous weekend! We’re starting things off here at What’s Gaby Cooking with a bang this week! A incredible recipe for Crab Cakes with a Tomatillo Avocado Salsa and a cheerful video. Get excited guys – this one is awesome!) So let’s get started. Crab Cakes are easily one of my favorite little indulgences. Pair them with some kind of salsa involving Avocados and you’ve got a winning combination.

For these crab cakes we are going to use lump crab meat. After a recent trip to New Orleans, I finally feel confident in my de-shelling and crab cleaning skills – but if you want to pick up some lump crab meat from your local market, go right ahead. It certainly makes life easier. I’m always super careful when mixing the ingredients together because I don’t want to break up the big juicy pieces of crab. So treat your crab delicately so that when it’s time to take your first bite, you’ll get lots of big pieces of crab in every bite.

The tomatillo avocado salsa that pairs with these crab cakes is literally my favorite condiment of all times. It takes almost no time at all to make, just throw everything in a food processor and away you go. You can add different amounts of heat depending on what you prefer but this salsa is always a winner for me. Tomatillos can sometimes be a little tart so the addition of honey and the California Avocado really smooth out the flavor and make this salsa totally obsession worthy! And, maybe if you’re really lucky, there will be leftover salsa and you can smother it on some nachos, grilled chicken or steak or perhaps in a breakfast burrito.

Crab Cakes with Tomatillo California Avocado Salsa + a Giveaway

Ingredients
  

  • 1/3 cup green onions chopped
  • 1/4 cup mayo
  • 2 large eggs
  • 1 tbsp finely chopped fresh chives
  • 1 tbsp finely chopped fresh cilantro
  • 1 tbsp finely grated lemon peel
  • 1 tbsp fresh lemon juice
  • 1 cup panko
  • 2 tsp salt
  • 2 tsp pepper
  • 1 pound lump crabmeat
  • 6 tbsp butter
  • 1 Avocado
  • zest and juice of 1 lime
  • 1 tsp honey
  • 1/4 cup cilantro
  • 1/4 cup white onion diced
  • 4 medium Tomatillos halved and roasted

Instructions
 

  • Stir together first 8 ingredients in large bowl and season with 1 tsp of salt and 1 tsp of pepper.
  • Add in crab meat and carefully combine with your hands, making sure not to break up the lump pieces of crab.
  • Form into bite sized cakes with your hands.
  • Saute in a saute pan with butter, over medium high heat, for 2 minutes on each side until golden brown. Set aside until ready to serve.
  • Combine the avocado, lime juice, lime zest, honey, cilantro, onion and roasted tomatillos in a food processor. Blend until fully incorporated. Serve with crab cakes.

  1. I would make lots and lots of guacemole and slice some up to add to sandwhiches! I just recently started eating more avacadoes. Where have you been all my life!

  2. Oh my goodness, what *wouldn’t* I do!? First off, I’d make guac, as at least one meal a week in my home is guac-based. I’d eat some of it with tortilla chips, and then I’d grill up some fish and top that with some of the leftover guacamole. I’d make a batch of those avocado fries I’ve heard so much about, and then I’d slice up whatever is left of the avocados and use them on some nice, spicy tostadas… I feel like I’m explaining what I’d do if I won the lottery… It’s wonderful. 🙂

  4. I love avocados! I’d either make a big batch of guacamole or else use some for one of my favorite sandwiches: sliced avocado, tomato, and basil with cream cheese, salt, and pepper on thick sliced bread. Sounds like an odd combination, but it is really the most perfect summer sandwich!

    As I’ve learned more about nutrition to support my crazy running ways I’ve come to really appreciate the health benefits of avocados and eat them regularly. I’ve been wanting to test a chipotle guacamole but I’m also thinking a crab-stuffed avocado would be a lovely summer treat.

  8. We love all of the above uses for avocado’s. My husband’s favorite sandwich is avocado with a little onion salt on whole grain bread. My poor mother-in law made avocado soup once for a family meal when all her grown son’s were there….they gave her a terrible time but they ate it and loved it.

  9. I’d mix it up: been wanting to try a new recipe for spinach/orange/avocado/red onion salad; guac, of course; and add slices to crabcakes and sandwiches. Yum!

  13. We eat avocado every day here…but my summer favorite is a salad of manila mango, avocado, Persian cucumber with mint-lime vinaigrette (you have a similar recipe on your site with arugula). For breakfast, a guacamole – scrambled egg burrito can’t be beat no matter what the season. My kids, however, would prefer an avocado pie.

  15. I’d make an entire meal featuring avocados. A shrimp cocktail with an avocado salsa as a starter. These crabcakes and salsa as the entree. And I’d make my own recipe for avocado sorbet for desert.

  16. Mmmm avocados. I might just slice them up and eat them with a little salt on ’em…. Most likely I’d spread a soft one on thick toast for breakfast every morning.

  17. After eating guacamole to my heart’s content, and maybe some sardine, avocado, lemon toast for my husband, I would probably branch out and try some recipes where avocado isn’t the main star like the one above! Avocado in salads and with seafood sounds amazing.

  19. If I won this avocado giveaway, I would start by spreading half of an avocado on a slice of whole grain toast. Next I would make up some chipotle guacamole, which I would keep all to myself and eat with a spoon 🙂 Then, I would whip up some dark chocolate brownies for my man, using the avocado in place of oil. Oh geeze, I have officially made myself so hungry!
