Happy Monday!! I hope everyone had a fabulous weekend! We’re starting things off here at What’s Gaby Cooking with a bang this week! A incredible recipe for Crab Cakes with a Tomatillo Avocado Salsa and a cheerful video. Get excited guys – this one is awesome!) So let’s get started. Crab Cakes are easily one of my favorite little indulgences. Pair them with some kind of salsa involving Avocados and you’ve got a winning combination.

For these crab cakes we are going to use lump crab meat. After a recent trip to New Orleans, I finally feel confident in my de-shelling and crab cleaning skills – but if you want to pick up some lump crab meat from your local market, go right ahead. It certainly makes life easier. I’m always super careful when mixing the ingredients together because I don’t want to break up the big juicy pieces of crab. So treat your crab delicately so that when it’s time to take your first bite, you’ll get lots of big pieces of crab in every bite.
The tomatillo avocado salsa that pairs with these crab cakes is literally my favorite condiment of all times. It takes almost no time at all to make, just throw everything in a food processor and away you go. You can add different amounts of heat depending on what you prefer but this salsa is always a winner for me. Tomatillos can sometimes be a little tart so the addition of honey and the California Avocado really smooth out the flavor and make this salsa totally obsession worthy! And, maybe if you’re really lucky, there will be leftover salsa and you can smother it on some nachos, grilled chicken or steak or perhaps in a breakfast burrito.
Here’s how to make them.. and make sure your volume is turned up!
and the recipe…

Guacamole for sure!
I would make lots and lots of guacemole and slice some up to add to sandwhiches! I just recently started eating more avacadoes. Where have you been all my life!
I would make this recipe! Delicious!
I saw a recipe for avocado gazpacho with sweet corn and crab that I really want to try.
I would make quacamole and spread some on some toast for lunch. I would also make this – your crabcakes sounds great with the cilantro….this sauce sounds divine!!
Oh my goodness, what *wouldn’t* I do!? First off, I’d make guac, as at least one meal a week in my home is guac-based. I’d eat some of it with tortilla chips, and then I’d grill up some fish and top that with some of the leftover guacamole. I’d make a batch of those avocado fries I’ve heard so much about, and then I’d slice up whatever is left of the avocados and use them on some nice, spicy tostadas… I feel like I’m explaining what I’d do if I won the lottery… It’s wonderful. 🙂
AWESOME video! I just want to keep watching it, so I can see how easy it is to do this.
Keep them coming!
I love avocados! I’d either make a big batch of guacamole or else use some for one of my favorite sandwiches: sliced avocado, tomato, and basil with cream cheese, salt, and pepper on thick sliced bread. Sounds like an odd combination, but it is really the most perfect summer sandwich!
OMG SUPER AWESOME – Love the fun little video – next time let’s see your smiley face please – I’m OBSESSED # xxx
What would I do with this amazing giveaway?!! I would make my Avocado Scones, shakes, guac & salads. LOVE this!! or should I say #obsessed.
I want to make this recipe! It sounds amazing!
I love the combination of tomatillos and avocados! I’m adding these to my to-try list for a summer party.
As I’ve learned more about nutrition to support my crazy running ways I’ve come to really appreciate the health benefits of avocados and eat them regularly. I’ve been wanting to test a chipotle guacamole but I’m also thinking a crab-stuffed avocado would be a lovely summer treat.
Oooooo yum! I would make my roommates famous bagel bake with sundried tomato cream cheese, avocados, & cheese all melted on an everything bagel… *drool*
btw: love these crab cakes!
We love all of the above uses for avocado’s. My husband’s favorite sandwich is avocado with a little onion salt on whole grain bread. My poor mother-in law made avocado soup once for a family meal when all her grown son’s were there….they gave her a terrible time but they ate it and loved it.
Loved the video!
Fresh made guacamole for sure! Cant beat that!
I’d mix it up: been wanting to try a new recipe for spinach/orange/avocado/red onion salad; guac, of course; and add slices to crabcakes and sandwiches. Yum!
I would start out by making a ton of the chipotle pepper guacamole you had on here a few months ago.
Guacamole of course, but I’d save a couple to use for smoothies and for this recipe – love Latin inspired crab cake recipes!
My husband and I would make avocado pico de gallo. It never lasts long at our house because we put it on everything from eggs to burgers!
No question, I would make pounds of guac
I would make an avocado smoothie! I love ordering it at Vietnamese restaurants.
Guacamole and salad with tomato and onion!
wow, with all those avocados….maybe avocado ice cream. I had it when I was a kid and have wanted to make it ever since!
Guacamole for sure!! <3 <3! Also I would save a little for a nice avocado and sprout on whole wheat pita bread, yummy! Awesome video Gaby! 🙂
We eat avocado every day here…but my summer favorite is a salad of manila mango, avocado, Persian cucumber with mint-lime vinaigrette (you have a similar recipe on your site with arugula). For breakfast, a guacamole – scrambled egg burrito can’t be beat no matter what the season. My kids, however, would prefer an avocado pie.
I’d eat them plain and with a spoon. Or in guac with some blue corn chips. Or on a burger. I might even try an avocado ice cream. SOOO many options!
Definitely guacamole! But I also really love them just sliced with a little salt 🙂
Guac, obviously. I also love to make tuna sushi bowls with tons of fresh avocado!!
Would be perfect to bring to my family vacation! Everybody loved my guac…
I’d make an entire meal featuring avocados. A shrimp cocktail with an avocado salsa as a starter. These crabcakes and salsa as the entree. And I’d make my own recipe for avocado sorbet for desert.
Mmmm avocados. I might just slice them up and eat them with a little salt on ’em…. Most likely I’d spread a soft one on thick toast for breakfast every morning.
We’d have a burrito / taco night with homemade guac!
After eating guacamole to my heart’s content, and maybe some sardine, avocado, lemon toast for my husband, I would probably branch out and try some recipes where avocado isn’t the main star like the one above! Avocado in salads and with seafood sounds amazing.
Yum!! I would definitely make some guacamole, but I’ve also been wanting to make your israeli couscous taco salad. Or maybe I’ll add some avacados to my sandwiches too!
Guacamole for sure. I’m addicted to the stuff.
If I won this avocado giveaway, I would start by spreading half of an avocado on a slice of whole grain toast. Next I would make up some chipotle guacamole, which I would keep all to myself and eat with a spoon 🙂 Then, I would whip up some dark chocolate brownies for my man, using the avocado in place of oil. Oh geeze, I have officially made myself so hungry!
Guacamole, salad, on sandwiches, salmon burgers, you name it!
This recipe sounds lovely and I would really like to try the avocados with it … however, avocado with lemon and salt is pretty wonderful!
I like you on FB!
If I won, I’d make my raw vegan avocado ice cream, or raw vegan chocolate mousse or guac.
I looooove some Avocado dip! Just Avo, salt, pepper, and lime juice! Maybe some sour cream for creaminess. Thanks for the giveaway!
Guac for sure. I would also like to try grilling them. Thanks!
I’d pull out my favorite Guacamole recipe! Thanks!
I LOVE avocados! I would just slice them up and eat them.
I would have all my girlfirends over for guacamole, chips, and margs!
Gaby- I LOVE crab cakes, and with that tomatillo avocado salsa!
Your video is so cute! love the background music 🙂
I can never have too much guac- yum!
You had me a tomatilla avocado salsa. I love avocados. I eat them every day. Literally. 🙂
