No matter what the occasion, the answer is always guacamole. And seriously people, what’s a Christmas party without a little guacamole? I mean, I live in LA, so I’ve gotta take advantage of the year round avocados that are available to me!

So let’s just talk about holiday parties here for a second. I’ve been a little swamped recently and I love it! I LOVE being busy. I just find myself way more productive when I have a ton of things to get done. There’s no room for procrastination. Well, unless it involved Pinterest, then it’s kinda like a procrastination and work thing, so it doesn’t count as wasting time. So when it came time to figure out what to bring to a holiday party last week, and I was only allowing myself a few minutes to whip something up, clearly the answer was guacamole. And it can’t just be any kind of guacamole!! It had to be a Christmas Guacamole because it was a Christmas party. And I firmly believe in having themed guacamole’s depending on the event and time of year.

So the Christmas Guacamole was born. It’s awesome. I used some giant Reed Avocados that were super creamy and buttery, threw in some pomegranate seeds and chopped jicama for some crunch, a squeeze or two of lime juice, some salt and pepper and voila! Christmas Guacamole was born.

Ingredients
  

  • 3-4 ripe avocados
  • 1 Lime juiced and zested
  • 1/4 cup pomegranate seeds
  • 2 tablespoons toasted pepitas
  • 2 tablespoons chopped chives
  • 2 tablespoons crumbled cotija cheese
  • Kosher salt and pepper to taste
  • Homemade tortilla chips

Instructions
 

  • Combine the avocado and lime juice and zest in a large bowl. Mash together with a fork until you have a half chunky half creamy consistency.
  • Add in the pomegranate seeds, pepitas, chives and cotija and stir together with a spoon.
  • Season with salt and pepper to taste and serve immediately.

  1. Besides guacamole, I like to make a sandwich with homemade bread, cream cheese, sliced avocado, sliced tomato, torn basil, and a springing of salt and pepper. Yum!!

  2. I have a group of young men that are always calling me to make guacamole for them. I also like to mix avocados with olive oil and replace the mayo on my sandwiches or add slices to burgers. But guacamole is still my favorite!! would love to win!!!

  5. I love fresh guacamole! So that’s probably my favorite thing to do with avocados. We also put it in salads, on burgers, tacos, etc… We are avocado crazy here lol.

  7. 1st choice is Guacamole served with tortilla chips or crackers, 2nd on a sandwich with yummmmm….can almost taste it now!

  8. My hubby would say we should make guacamole with every single last avocado, but if I got a say, we’d make avocado dressing, pasta sauce, and chocolate pudding (yup – chocolate pudding…they make it so smooth and creamy!).

  11. Lately, I’ve been eating my avacados with a spoon from the shell. But when I’m not being lazy, I love to make guacamole or use them to top your chicken chili recipe.

  12. I like to take diced avocados and add them to a salad of roasted pineapple with a little cayanne kick, butter lettuce, pecans and a pear vinaigrette. Sweet, spicy and creamy all in one! Yum!

  13. Has to be guacamole! Sooooo delicious. I remember as a kid, though, my mom would cut them in half, remove the pit and fill the hole with lemon juice and then we’d eat it with a spoon.

  14. I love avocados sliced with fresh lime juice squeezed over them. Buttery, fresh, yummy, wonderful tastebud love – no additional ingredients needed!

  15. I love straight avocado dusted with an herb/pepper sea salt. My favored jarred salsa is made with avocado, cucumbers, and jalapenos. Minimal refrigerated shelf life, but I could eat an entire jar as a meal. Have a lovely holiday, Gaby!
