No matter what the occasion, the answer is always guacamole. And seriously people, what’s a Christmas party without a little guacamole? I mean, I live in LA, so I’ve gotta take advantage of the year round avocados that are available to me!
So let’s just talk about holiday parties here for a second. I’ve been a little swamped recently and I love it! I LOVE being busy. I just find myself way more productive when I have a ton of things to get done. There’s no room for procrastination. Well, unless it involved Pinterest, then it’s kinda like a procrastination and work thing, so it doesn’t count as wasting time. So when it came time to figure out what to bring to a holiday party last week, and I was only allowing myself a few minutes to whip something up, clearly the answer was guacamole. And it can’t just be any kind of guacamole!! It had to be a Christmas Guacamole because it was a Christmas party. And I firmly believe in having themed guacamole’s depending on the event and time of year.
So the Christmas Guacamole was born. It’s awesome. I used some giant Reed Avocados that were super creamy and buttery, threw in some pomegranate seeds and chopped jicama for some crunch, a squeeze or two of lime juice, some salt and pepper and voila! Christmas Guacamole was born.
Christmas Guacamole
Ingredients
- 3-4 ripe avocados
- 1 Lime juiced and zested
- 1/4 cup pomegranate seeds
- 2 tablespoons toasted pepitas
- 2 tablespoons chopped chives
- 2 tablespoons crumbled cotija cheese
- Kosher salt and pepper to taste
- Homemade tortilla chips
Instructions
- Combine the avocado and lime juice and zest in a large bowl. Mash together with a fork until you have a half chunky half creamy consistency.
- Add in the pomegranate seeds, pepitas, chives and cotija and stir together with a spoon.
- Season with salt and pepper to taste and serve immediately.
What DON’T I like avocadoes ON or IN? My favorite is when we make guac and my son & daughter are elbow deep in it…love it!
What to do with the avocados?? Why try Christmas Guacamole recipe, of course!!!
Guacamole, of course, but also love to eat half an avocado with some lemon juice sprinkled on top as is for lunch or a snack –
I usually spread 1/2 an avocado on some toast as an “after school” snack – it’s the perfect amount of food to hold me over till dinner!

Mmm I’ve been wanting to try these avocados! I love to mix up a little vinaigrette and pour it into the hole where the avocado seed was, and just eat the whole thing plain with a spoon. Simply delicious!

That’s an awesome recipe! I bet the jicama adds a nice little crunch. I love adding avocados to almost all of my dishes. My favorite thing is to make an avocado smoothie. I’ll add ice, avocados, condensed milk and some low fat half and half. Very delish dessert. Sometime I’ll add tapioca balls to make it a bubble tea drink. 🙂

I’m a guac girl. I love it on just about everything – salads, burgers, tacos, enchiladas, turkey sandwiches, nachos, tortilla chips, a large spoon…
This looks great….so festive and I’m sure a great flavor combo.
My fav thing to do with avocados is guac or a simple spread for a veggie sandwich.
I make a Green Salad that has avocados, tomatoes, cucumbers, and spring onions and I mix in an Italian dressing.
Now I’m craving avocados. And my favorite thing to do with them is mash them on toast with Maldon salt and good pepper. Though I tried some with lavender salt last time I was in SF and they were awesome.
