I’ve been up to my ears in recipe testing these last few weeks. I’ve got a BUNCH of travel coming up so I wanted to make sure I had plenty of recipes to share! This week I’m heading out to NYC for IACP. If you remember, last year I made a road trip food excursion to IACP in Austin with 2 of my favorite food ladies Aida and Lillian! And while this year won’t have any road trips attached since we have to go all the way to NYC, there will definitely not be any shortage of great food and drink! After NYC, I’m heading to Louisiana for a hot second and then up to Portland for a weekend to see my lovely sister graduate from her grad school program. And then it’s off to San Fran for 29 hours and then the big Surprise Vacation!! I still think we’re going to Africa. So keep your fingers crossed for me. I mean, I think it would be really nice of my parents to take me to Africa for my 26th birthday don’t you?
So… in preparation for eating out a lot over the next few months, I’m keeping things simple with lots of fresh fruit smoothies and juices at home. Okay, so, there are a few cookies peppered in between my juices. I mean who are we kidding! I’ve gotta have a little chocolate in my life!
This Pineapple Blueberry Smoothie is one of my latest and greatest fresh fruit inventions. It’s tropical and makes you want to be on a beach with your toes in the sand and getting a tan. Because doesn’t that just sound awesome. Minus the fact that I’m so ghostly pale right now I would be terrified to see myself in a bkini, I think being on a beach sounds kinda perfect. Hawaii would be nice. But I’d settle for a little weekend jaunt to Cabo. Or maybe somewhere in the Caribeean. But hey, I’m not picky. Give me a beach and some sunshine and I’ll be a happy camper.
So let’s get down to business. This Pineapple Blueberry Smoothie is a combo of fresh blueberries, a banana, and fresh pineapple with a little fresh orange juice to round it out. You should make it. And pretend you’re on the beach somewhere. Kthanksbye.

I just made the smoothie and IT IS SO DELICIOUS!!! Love it. I like that it is pure fruit with just OJ and no yogurt, which lcuts down on the calories (in yogurt) … I need some cute straws like you have!

I recently got a Cuisinart mini blender/smoothie maker that comes with cups and lids and all to make special smoothies…I can’t wait to try this. I have been blending all sorts of things and this looks soooo good!
This was really good! We added some vanilla muscle milk and whey powder and it was superb. My hubby added peanut butter to his and proclaimed it was “perfection”.
I’m always looking for healthy drinks. Can’t wait to try this one
These drinks are yummy! I make mine with a few ice cubes, yogurt, banana, any other fruit you may want, some juice, any will do…and mix in a blender…sometimes I even add oats…great breakfast drink!
