You guys know I’m all about a taco dinner right? But it can’t just be tacos, well I guess technically it could – but hello, we need side dishes!! Like loaded potatoes and a BBQ corn salad! Things that take almost no time to whip up but seriously pack a punch when it comes to taste!

I’m all about making your lives easier but not skimping on ANY flavor. None. We need lots of delicious things in our lives at all times, am I right? So when Birds Eye came to be to help debut their new line of Steamfresh® Flavor Full veggies I was 100% game. They have BBQ Sweet Corn you guys. Game over! If you’ve been a WGC reader for a while, you know corn and potatoes are my go-to’s when it comes to side dishes. You can mix and match them any way, serve them with just about anything and it’s bound to be glorious. So I thought for about .23 seconds and figured I’d whip up a dinner near and dear to my heart…

Aaaaannnddd…. BBQ Corn Salad (recipe below)

The sides take less than 5 minutes of hands on time each – I’m not sure life gets better than that! And the carnitas make enough to double as leftovers for lunch the following day. I’d say it’s a win all around!  Before we get to the giveaway – you should probs just freak out for a minute that Birds Eye has Ranch Broccoli, Buffalo Cauliflower and Sour Cream & Onion Potatoes, among other flavors! Those are my current favs – but feel free to check out the others and go to town!

BBQ Corn Salad Prep

BBQ Corn Salad

Course Salad

Ingredients
  

  • 1 tablespoon vegetable oil
  • 3 cups Steamfresh® Flavor Full BBQ Sweet Corn
  • Kosher salt
  • 2 ounces feta finely crumbled
  • 1/2 cup finely sliced green onions
  • 1/2 cup fresh cilantro leaves finely chopped
  • 1/2 jalapeño pepper seeded and stemmed, finely chopped
  • 1 tablespoon fresh juice from 1 lime

Instructions
 

  • Heat oil in a large non-stick skillet over high heat until shimmering.
  • Add corn, season to taste with salt, toss once or twice, and heat through. Once warmed, turn the heat off and add the cheese, scallions, cilantro, jalapeño and lime juice and toss to combine. Taste and adjust seasoning with salt and pepper as needed. Serve immediately.

  1. I’m old fashion. Love butter, sour cream, cheese, bacon and chives. OK sounds weird. If I’m eating it with a steak sometimes I’ll use Au Jus and tons of creamy horse radish Sauce maybe extra sour cream. Yummmmmmm. Now I’m hungry and need to make myself a load potato lol. No seriously I do. The power of suggestion hmmmmm.

  2. I love baked potatoes loaded with coleslaw, but it has to be the proper full fat mayo kind or it just doesn’t taste right. It can be any kind of coleslaw, Coronation (curry spices) or cheese is good. Oh, and a generous sprinkling of extra mature cheddar.

  3. Well, I’m a salsa addict so the toppings would have to start with salsa then guacamole, sour cream and finally shredded mexican blend cheese. Voila-perfection!

  4. My favorite topping on a loaded would be lots of spicy guacamole.Lots of pico de gallo, Mexican chorizo and queso fresco would also be in my loaded potato. I like sharing your recipes on Twitter, Facebook, and Linkedin.

  5. For me, the perfect loaded potato serves as vessel for a “bowl” type dinner and a way to use up leftovers. If am being good, I will add fresh shredded spinach or kale directly on the potato. If not, then I would add guilty pleasure creamed spinach.. Next addition is Gaby’s chicken Marsala, now day old and cut into bite pieces. I will probably have to add a extra mushrooms and then fresh Parmesan on top of everything. Plus some freshly ground black pepper. Of, course a giant glass of red wine completes the meal!

  6. Welllllllllll, dang, can’t pick just one, but I’d have to say definitely would love some salsa on that. I’ve never tried guac on a baked potato. Gonna have to try that one. You’re a genius!!!

  7. Sour cream is always the best on top of any potato, one could argue that it couldn’t be considered “loaded” without that creamy dairy product.

  8. Woah, that’s a killer giveaway! I loooove using potatoes and sweet potatoes instead of chips to make loaded nachos. And I mean loadeddd. My favorite combo is carnitas, black beans, corn, fajita veggies, black olives, freshly grated cheese, then topped with salsa, guac, and greek yogurt!

  9. Best thing I ever ate on top of a baked potato???!!! Ready…….queso fundido ( Classic with chorizo of course) a dollop of salsa fresca and finished with a dollop of sour cream. Now if the potato has a super duper crispy skin………JACKPOT! Best. Thing. Ever!

  10. I love potatoes any way but nothing can beat the traditional butter, bacon and scallions. My homemade chili is a pretty good topper, too.

  11. BASE BAKED POTATO, BUTTER, S&P. TOPPING #1 SAUERKRAUT, BEEF LITTLE SMOKIES, SHREDDED SWISS CHEESE AND CHOPPED RIPE TOMATOES. TOPPING #2 SHREDDED ROAST BEEF, CHOPPED ORTEGA CHILIES AND SHREDDED JACK CHEESE. TOPPING #3 BBQ PULLED PORK AND COLESLAW. TOPPING #4 BEEF, PORK OR CHICKEN LIVER WITH SAUTEED ONIONS, MUSHROOMS AND BACON. TOPPING #5 DICED HAM AND GREEN BEAN CASSEROLE.

  12. I would top it with shredded cheese and diced bacon. There are so many ways to make it that you could eat it every night.

  13. You’re a girl after my own heart. My go to toppings are always, always Mexican. I would for sure use guacamole, sour cream and salsa!!

  15. I’m an elementary school teacher, and sometimes I order a baked potato from the school cafeteria on days when I’m too busy to pack a lunch. I love it with the butter, cheese, and sour cream they give me, but I keep a secret weapon in my desk drawer to liven things up: Sriracha! Puts a little kick in my day…just in case things weren’t lively enough already!

  16. I find that Chipotle Sour Cream goes AMAZING with sweet potatoes. So I’d do a runny chipotle sour cream and guacamole!

  17. My favorite toppings are sour cream,butter,chives and bacon bits. Oh and cheese. The bbq corn salad sounds great,I have never tried it before. I love Birds Eye products also.

  18. Guacamole…definitely guacamole. But it has to be on the side for dipping so the cheese topping stays nice and stringy-hot and the potatoes stay crispy! YUM!!
