From bread to salad to risotto, I’m rounding up my favorite zucchini recipes on the web to celebrate the abundance of zucchini all over the place!
The other day at the farmers market I literally encountered a zucchini that was the size of my arm. Literally. It was insane. And while I didn’t take it home with me, I did take home some cuter zukes that went right into a risotto! And then I proceeded to eat the entire thing by myself. Because that’s how I roll. We LOVE zucchini! I have been making fritters all summer and am always looking for new ways to use the zukes that seem to pop up overnight in my garden!! This is perfect!
