Baking season is upon us, and I’m ready!! I’m armed with plenty of butter, the freezer is stocked with puff pastry, my vanilla supply is in full force, I’ve stocked my sugar jar and I can’t be stopped! First up this year is this Vanilla Apple Tart.
It’s one of those perfect desserts that you can use any time this fall, especially since the ingredients are almost always stocked in the kitchen. Even better, the crust is just a sheet of pre-made puff pastry (that you can find right in the frozen food section), because have you ever tried to make homemade puff pastry!? No one has time for such things! This tart could make an appearance at a dinner party, Thanksgiving, Christmas or New Year’s Eve… basically any occasion that calls for a super epic dessert, this is your ticket! And the best part, there is no sharing involved because everyone gets their own! Jackpot.
I’ll be serving it up at our first big dinner party of the season in a few weeks to kick-off Halloween! All of my friends will be there, costumes in tow, and besides our costumes, this dessert will be the highlight of the meal!! And, I’m making a promise to myself right now to keep all dinner parties this season simple. That means making a few really superb dishes and letting them shine. No need to make a billion things – it’s quality over quantity guys!!!

Vanilla Apple Tarts
Ingredients
- 1 whole sheet Pepperidge Farms puff pastry cut into rectangles
- 1 cup brown sugar
- 1 vanilla bean
- ½ lemon juiced
- 1/4 teaspoon salt
- 3 whole apples cored, halved and sliced, but not peeled
- 1 tablespoon Land O’ Lakes butter
- Store-bought caramel sauce for serving
Instructions
- Preheat the oven to 425 degrees F.
- Place the puff pastry rectangles onto a silpat lined baking sheet. Add the sugar, salt, lemon juice and vanilla bean seeds to the apples. Stir to combine. Allow to sit for a few minutes.
- Arrange the apple slices on the pastry rectangles in a straight line, overlapping as you go. Dot the top with little bits of the butter. Bake until the pastry is puffed and golden brown, about 20 minutes.
- Remove from the pan immediately and place on a serving platter. Serve with caramel sauce on the side.

I’m a big fan of dinner parties!! A group of friends, my hubby and I have a monthly “dinner party” where we take turns hosting. There’s always tons of good food, friends and most importantly delicious wine!
My favorite fall get together is having a day of the dead celebration. I put up several altars and invite everyone over to view them along with a dinner of my husbands home made mole and tamales.
So easy, so few ingredients and so yummy! Great recipe!
A bunch of us go for a walk around Horn Pond. The Pond is teeming with wildlife; geese, ducks, swans, egrets, even bald eagles. It’s so peaceful and refreshing. Then we come home and have a nice stew and some wine.

My favorite way to spend quality time with friends in the fall is weekend getaways – there’s so much to see and do here in the Pacific NW, and fall is a lovely time to do it!
I love going to brunch with my friends on the weekends. We like to try local small restaurants around Cambridge and Downtown.
Football-watching parties! With all the delicious foods that football season brings.
My favorite thing is to make a big dinner and then invite friends over to eat and play board games 🙂 indoor activities are my thing!
My boyfriend and I have a huge Halloween party. It gets bigger and better every year! He handles the savory snacks and I’ve got all of the desserts. 🙂

In my opinion, fall is one of the best season. We get some lovely crisp weather and get to break out the boots and sweaters. Fall just has a magic to it that makes everything so much better. I absolutely love to get friends together in a cozy setting at night! It’s so relaxing to sit out on the patio by the fire, bundled up with a blanket and a few candles. Add a cheese plate, some wine and it’s practically heaven. And of course a little dessert never hurt anyone. Always a perfect get together that everyone enjoys!

We have a Friends & Family Harvest party before Halloween and make festive appetizers, desserts, decorate cookies and carve pumpkins.
Favorite thing to do in the Fall is go apple picking with my husband and kids. This year we pick 50#’s of apples. Now it’s time to use them up and they all help either with baking or eating;) So your vanilla apple tarts just went on the list of things to make.

Every Sunday, my sister and her husband come over to have dinner with my daughter’s family and my husband and me and we play cards and board games with the kids. We always try to have a really terrific dessert. Families are great.
I love it when my sister and her kids come up to visit me during the holidays. It is always fun to talk and talk with her till all hours of the morning.
