Looking for a great potato salad for this weekends Fourth of July festivities? Well, look no further. This lightened up version of a potato salad is perfect for big BBQ’s and parties this weekend and it will stay good all day long! Especially because there is no mayo in it – which means it can hang out on the buffet table for as long as you need along with all your other Fourth of July goodies like, Chipotle Guacamole, Strawberry Basil Lemonade, and BBQ Baby Back Ribs!

This potato salad consists of 3 fabulous parts. 1, the potatoes. I like the use dutch baby potatoes because they nice and creamy and you don’t have to peel the skins! 2, the scallions. These little bites of freshness just make the salad pop. 3, the champagne shallot vinaigrette. It’s a winner. And you’ll want to eat it on just about everything once you’ve tried it.

Ingredients
  

  • 4 cups dutch baby potatoes cut in half
  • 2 shallots minced
  • 1/3 cup champagne vinegar
  • 1 tbsp Dijon Mustard
  • 1/2 cup olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 6 scallions chopped

Instructions
 

  • Place the potatoes in a large pot once sliced. Add enough water to the potatoes so that they are all covered.
  • Place pot onto the stove over medium high heat and cook until potatoes are fork tender.
  • Drain water from potatoes and set the potatoes aside to slowly cool.
  • Prepare the vinaigrette by combining the shallows, champagne vinegar and dijon mustard into a bowl. Slowly steam in the olive oil while whisking. Season with salt and pepper.
  • Transfer potatoes to a serving bowl and toss with the vinaigrette. Sprinkle with green onions and serve. (Can be served warm, at room temperature or chilled)

  1. 1. I LOVE Cutco. I own an entire set, and can ALWAYS use more because my mother in law tries to jack them, because SHE wants her own set. 2. Headed to the beach 9(San Clemente) for the 4th. Lots of friends, sun and food, I’m pumped!

  2. I’m not quite sure what I’ll make for fourth of July yet. We’ve been invited to a BBQ, so I want to bring something. I’ll probably end up bringing a cheddar pasta salad, but I’m also trying to think of a great summer dessert I could bring.

  3. Well, I was going to comment anyway but now with a glance at those knives, I’ll definitely comment!! I am making a potato salad as well. Mine is similar but with some shelled peas. I made a batch last weekend and loved the flavor without the mayo. Yours looks delicious!!

  4. I will actually be on a plane for most of the 4th, but I plan on eating a falafel wrap and spicy lentil soup from Taste of Lebanon as soon as I touch down in Chicago!

  5. I’m baking a white cake in a pampered chef baking stone with a homemade icing. The icing tastes just like a wedding cake icing. I can eat the whole thing by myself. Delicious!

  7. I will be working on the 4th of July, so I will be thrilled to come home after 12 hours of work and make a huge salad and top it with grilled salmon.

I just bought my cutco set +8 omg am still excited got them this week and I told the rep I wanted this set but later but my favorite thing we do the fourth of July is we barbq and eat potatoes salad rice beans and put the pool up and jump in at night we head to down town and check out the fireworks and that’s our 4th I’ll go to fb and be a fan bye hope everyone has a good 4th

  11. We’re having a cookout at our house, and will be making a mixed grill on our big green egg – some chicken, venison sausages, and maybe some burgers! This potato salad looks like a great side dish…

  12. I was just thinking about how to prepare my pork chops for the 4th. It’s my first year as “hostess”. Yikes! But I’ll also definitely be making some green beans, corn, and smores cookies. Yum!

  13. I am going to make a South African Potjie with the main ingredient being Lamb shanks. Added to this will be red wine, potatoes, carrots, onions, mushrooms, squash, green beans, broccoli with lots of herbs and spices. If you put a drop of the gravy on your forehead, your tongue will whip up and knock you unconscious trying to lick it off!!! Also I am going to make a Potjie beer bread. These two dishes are cooked in Potjie pots (Dutch ovens) on wood coals. I’m telling you, absolutely delicious.
    Every American that has tasted this meal has said to me that it is worth 5 stars!!!

  14. I don’t usually get to fancy for the 4th and to be honest I just love a good BBQ with hamburgers and some great grilled veggies. Keeping it easy but still delicious.

  15. Hm, what would I cut with new knives for the Fourth? Your potato salad is looking really good. Then of course, there are crudités, steak, strawberries, raspberry-blueberry pound cake . . .

  18. I have a broccoli/cauliflower salad that is a family favorite. That is on my menu.
    I’ve had my set of cutco knives for 40 years now, just had them resharpened and they are like new. But, always room for more!! 🙂

  19. We’ll be making guacamole for the 4th…AND I’m planning to make your potato salad. Burgundy pepper tri-tip too. Zucchini from the garden..maybe a raw veggie salad. Would love those Cutco knives! Am already a Facebook friend. I’ll be playing two band concerts on the 4th…one on the Green in Rancho Santa Fe with Coastal Communities Concert Band and the other at the SD County Fair with the Navy Band Southwest….just before the fireworks!

  20. July 4th always reminds me off caramel popcorn. Grandma would make a huge batch and we would eat it while watching fireworks. Doesn’t get much better! Have a great holiday!

  23. My favorite thing to make for the Fourth of July party would be little limoncello cupcakes. I combined two recipes to create them, and they are a huge hit wherever I take them. I’m going to the kitchen right now to make them!
    And….I LOVE Cutco knives. I don’t have the Santoku-style, so winning them would be GREAT!!!!!

  24. I would absolutely LOVE to own a pair of these knives! I have a feeling that they would make life a whole lot easier, as compared to my cheap knives. 🙂 I LOVE coming up with different summery drinks- mixes of lemonade, iced tea, limeade, & whatever else you can think of! Favorite.

  25. I love CUTCO knives — The Santoku knife is my favorite and need an extra one for my hubby. We always fight for it when we are both in the kitchen! My mom’s potato salad is my favorite side dish for the 4th! Happy 4th girl!

  26. The best 4th of July food is BBQ pork ribs! Char em on the grill then put them in a pan of beer covered for a few hours in the oven. The last 30 minutes they get slathered with BBQ sauce and put back in the oven uncovered. They will FALL OFF THE BONE. Yum!

  27. I turn 40 on the 4th (!) and will celebrate my and America’s birthday by making my own ice cream with my two little boys. A WS box arrived yesterday and I’m certain I know the contents. The rest of the cooking is up to my husband! 🙂

  28. This weekend, I’ll be making my mom’s sangria recipe. It’s always a hit at parties, and I finally asked her to give me the recipe. Turns out it’s made with Carlo Rossi (!!), peach Schnapps, some fruit juices, and sugar. Now I just don’t tell anyone how cheap it is to make.

  29. Happy 4th! We’re cooking a coffee/spice rubbed flank steak cut and rolled into pinwheels wrapped in bacon. Cooking it in a big ole black cast iron pot that my daddy made into a bbq grill. He gave it to me before he went to heaven. I’ll probably throw a chicken on there too just to cook along with the steaks. Hate to waste all that heat and good flavor 😉
