Salmon is one of my all time favorite things to make for dinner. Those people who knew me pre-culinary school, will think that I’ve lost my mind because I didn’t eat any seafood until about 3 years ago. But now I’m full on obsessed and love it! Salmon is one of my go-to fish choices. It can be awesome on it’s own but it really gets jazzy when you spice things up with different herbs and such. My favorite is a pan-seared salmon with basil pesto on top. Drool. The flavors are perfection together and it’s 100% comforting while still being pretty healthy. And it only takes about 10 minutes to whip up this dinner – can you say easy? I love it. It’s the perfect weeknight dinner when you’re craving something healthy, bright and fresh but don’t have lots of time.

Salmon with Pesto + Anderson Seafood Giveaway

Ingredients
  

  • 2 cups fresh basil leaves packed
  • 1/4 cup freshly grated Parmesan cheese
  • 1/2 cup olive oil + 3 tbsp
  • 1/3 cup pine nuts
  • 2 tsp red pepper flakes
  • 2 whole garlic cloves
  • Salt and Pepper to taste
  • 2 - 6 oz salmon filets

Instructions
 

  • Combine the basil leaves, Parmesan cheese, 1/2 cup olive oil, pine nuts, garlic and red pepper flakes in a food processor and blend until smooth. Season with salt and pepper as needed. Remove from food processor and set aside.
  • Salt and pepper the salmon filets and drizzle with 1 tbsp olive oil.
  • Add the remaining olive oil to a skillet over medium high heat. Once the oil is hot, add the two salmon filets and cook for about 3-4 minutes on each side until done. Carefully remove from the skillet and serve with 1-2 tbsp of the homemade basil pesto.

  1. Pan-seared salmon is my favorite, with a citrus balsamic reduction sweetened with brown sugar (actually an old Rachel Ray recipe) – and I love the idea of putting red pepper flakes in pesto! I can’t wait to try it!

  3. My fav is a marinated, grilled salmon filet with lime juice, olive oil, cumin, allspice, fresh garlic, and sugar. It’s so darn yummy!! The recipe was from All Cooks and I changed it up a bit. It’s wonderful.

  4. Before my husband and I were married ( I won’t say how many years ago) we always went to a Chinese restuarant and had what they called Chicken Fried Halibut. They have since closed but I miss them to this day!!! Wish I had the recipe. Anyone out there???

  5. I LOVE caramelied scallops with shallots and white wine. I don’t make it very often (for company, mostly) but my go-to seafood dish is salmon also! So easy, versatile and delish!

  6. I love beautiful, simple food like this gaby- Just a gorgeous piece of salmon with that bright beautiful pesto. divine! But my very favorite? Cracked crab with lemon butter πŸ™‚

  7. Our favorite is grilled salmon with a soy-apple cider-garlic-butter reduction for a marinade. It’s an old Food & Wine recipe from the 80’s that became our go-to recipe.

  8. I love White Sea Bass. I buy a fillet with the skin on, put the skin side down on the grill, top it with a mayo/teryaki mixture, cover the grill. It is fantastic! I also like Sweet Shrimp. I like Halibut, Swordfish, Ahi Tuna. I like crab and scallops. I like Sea Trout and Barramundi and Ono.

  9. It’s a toss up between grilled salmon over hardwood & marinated in a citrus soy marinade OR Buffalo Shrimp, simply grilled then tossed in a buffalo wing sauce and butter. Okay, now I’m hungry!

  11. I absolutely LOVE any kind of seafood but I do have one that is so mouth watering to me. Its crab stuffed salmon. Its crab meat stuffed inside of a piece of salmon rolled into a little crab cake. Such a wonderful taste when you bite into both at the same time.

    P.S. I just discovered your blog and I love it. I made the Green Pepper Steak last week and it was yummy. Can’t wait to try this one.

  13. I LOVE salmon. I like to roast it at home with just a little olive oil/salt/pepper. If you have a Longhorn restaurant in your area…their salmon is THE best EVER! I love shrimp fixed anyway but I especially like shrimp cocktail with extra hot horseradish cocktail sauce. Please bring me a lobster and LOTS of buttah! πŸ˜‰

  14. We love seafood!! Crab cakes, shrimp, salmon, tilapia. All of it! We make tilapia with a Parmesan spread on top that everyone in the family loves! Even our young daughters ask for more fish : )

  15. I adore seafood!! My favorite is a medley of shrimp, scallops, and mussles floating in a spicy tomato sauce with thick strands of pasta.
