Don’t you think today calls for Pumpkin Chocolate Chip Cookies? I do. I think it’s just what we need to get the weekend started.

Especially because last night was a late night. I mean we had Grey’s, Glee, Scandal and Real Housewives of Miami. So yes, I think cookies are totally in order. You should make these this weekend. Especially because they have pumpkin in them and now that it’s October, we are allowed to put pumpkin in everything right? Right?!?

And, let’s talk about the fact that these cookies don’t have BUTTER. Whaaaaaat? Who does that? Well, me. I had a little overdose on this gooey butter cake I made earlier this week and I was feeling heavy. So I wanted to make cookies without butter and oil and instead I used some non fat Greek yogurt. The result was delicious! The cookies were light and fluffy and you could eat a bunch of them without feeling super guilty.

So make these this weekend. And share them with your friends. And everyone will love you and buy you lots of fabulous presents because you’re just plain awesome.

Pumpkin Chocolate Chip Cookies

Ingredients
  

  • 2 cups flour
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 2 eggs
  • 1 cup sugar
  • 1/2 cup greek yogurt
  • 1 cup canned pumpkin
  • 1 tsp vanilla extract
  • 1 cup chocolate chips

Instructions
 

  • Preheat the oven to 325 degrees F and line 2 baking sheets with parchment paper.
  • Sift the flour, baking powder, baking soda, salt and cinnamon together. Set aside.
  • In a mixer combine the eggs and sugar and whisk for 3 minutes until it doubles in volume. Add the yogurt, pumpkin, and vanilla and blend until fully combined. Mix in the flour and then add the chocolate chips. Refrigerate dough for 2 hours.
  • Once chilled scoop 3 tbsp scoops of the dough onto the baking sheets, 12 cookies per sheet. Bake for 16 minutes and remove from the oven. Let the cookies cool for a few moments on the baking sheets before transferring to a cooling rack. Repeat the process with any remaining dough.

  1. I recently made pumpkin chocolate chip cookies too! I just haven’t put them on the blog yet. Oops, lazy.

    I’ve got to say my favorite cookie ever is this gingerbready molasses cookie that I can’t make often while in France because the molasses here is ridiculously expensive. Sigh. I miss you, chewy molasses cookie.

  2. UPDATE: Please excuse the profanity, but the first thought that came to mind as I took a bite of this cookie was, “Holy s**t, these are good!”. I don’t know why I want to use the word “springy”, but the consistency of these cookies are unlike any I’ve ever tasted! The dough is so incredibly light and fluffy. I applaud you Gaby, and thank you.

    I might need to change my answer for favorite cookie of all time…Amazing.

  3. My old favorite was Oatmeal Chocolate Chip, but recently I found Brown Sugar Cookies, and then last week I found my current favorite Dark Chocolate Pistachio with smoked sea salt flakes.

  4. My favorite cookie would have to be oatmeal raisin cookies. I love the Combination of oatmeal and raisins and the spices. Soo good! And these cookies, look amazing and with no butter? I just have to make them sometime.

  5. It’s hard to pick just one favorite, but I do love White Chocolate Chip Macadamia Nut Cookies. I’m a huge pumpkin fan though and can’t wait to try out this recipe, sounds amazing!

  6. My all time favorite cookie is my UN-chocolate chip cookie. It’s basically just a chocolate chip cookie with different chocolate chips from around the globe (UN = United Nation countries). I love chocolate and I always search for different chocolate brands. I would sometimes chop a bar of chocolate to mix into my dough.

  8. Wow, I can’t believe those cookies don’t have any butter or oil in them! I’m definitely going to give them a try. My favourite cookie is Kim Boyce’s whole wheat chocolate chip cookie from Good to the Grain. I just keep going back to it over and over and over again. Love it!

  9. I just made these after stumbling across them searching for other versions of this recipe. The greek yogurt substitution made me curious & I had to try this, instead of another one calling for A CUP OF BUTTER! And they’re soooo delicious. They’re fluffy, like a muffin top but more bready, I can’t even explain it. I just love the texture, so it makes them double fun to eat b/c I don’t feel so guilty! 🙂

  12. My brain is struggling to wrap itself around these absolutely delightful cookies – in the absolute best way possible. These are the fluffiest cookies I have ever made, they’re almost bread or biscuit or cake or pretzel like in consistency (my bf and I are debating – I say biscuit, he says cake). Joyful air pockets!
    And I haven’t even gotten to taste. It may be a bit heavy on the chocolate chips, but that’s a matter of taste. Otherwise, straight up delicious.

    Also, they are enormous!

    It’s kind of like eating a pumpkin chocolate chip cartoon cloud to put it as close to accurate and oddly as possible.

  13. I made this recipe into muffins .. As I was reading the recipe, I figured it would do better was muffins .. Made a dozen and 1/2 muffins… So delicious! Great breakfast or snack!
