Marshmallow Muffins

I guess I have been bitten by the baking bug! I have been baking up a storm – which in turn makes my kitchen a sauna – but nothing that can’t be fixed with a quick jump in the pool!

As a kid I used to eat those double chocolate chip muffins from Costco like it was my job. You know the big huge ones they have in the bakery – don’t deny it – you know what I am talking about! I would eat 1/4 a muffin for breakfast every morning (healthy right?) but I was never much of a breakfast person so these sweet treats were the perfect thing for me! Anyways… I decided to to make my own version of those muffins just for fun and add marshmallows… because marshmallows are awesome.

Marshmallow Muffins

Ingredients
  

  • 2.5 oz butter
  • 2 cups flour
  • 6 tbsp cocoa powder
  • 3 tsp baking powder
  • 3/4 cup sugar
  • 1/2 cup chocolate chips
  • 1/2 cup marshmallows
  • 1 egg beaten
  • 1 1/4 cup skim milk

Instructions
 

  • Line a cupcake tray with cupcakes liners and preheat the oven to 375 degrees. Melt the butter.
  • In a bowl combine the flour, cocoa, baking powder, sugar, chocolate chips and marshmallows. In a large mixer whisk the egg, milk and melted butter. Slowly add the flour mixture until completely mixed. This will form a stiff batter. Divide the batter evenly into the 12 cupcake liners. Bake for 20 minutes. Remove from oven and cool on a cooling rack.


Doesn’t that look delicious! Look at those melted marshmallows and all that chocolate! yummmmm


A perfect snack for breakfast, lunch or dinner 🙂 Maybe even for dessert!

    Do you find that skim milk (vs 2% or whole) makes a difference? Just wondering….

  6. Of all the things I have found on Pinterest, I think I love you the most! My only regret is that I’m on a business trip at the moment and can’t rush straight into my kitchen to try these delicious muffins!
