um hello birthday cake. hello 1 billion calories. hello deliciousness.

This is what I made for my dear boyfriends birthday this past weekend. It was decadent. It was amazing. And it got eaten up in 10 minutes flat after a days worth of time layering this masterpiece!

It was pretty extravagant to say the least. I mean you only have 1 birthday a year, and apparently calories don’t count on that day so in my book that means, EAT UP!!!

Now there is no exact science to making a layered ice cream cake… just lots of patience and licking your fingers… so here is a template for making your own creation. Feel free to change up ice cream flavors or any other aspect you want!

Ingredients
  

  • Mint Chip Ice Cream
  • Chocolate Fudge Ice Cream
  • 3 thin 9-inch brownies
  • 2 thin 9-inch cookies
  • Cream Cheese Frosting

Instructions
 

  • On a cake stand, place one of the thin 9-inch brownies. Spread some of the mint chip ice cream on top of the brownie and add a 9-inch cookie on top. Gently press down on the cookie so the ice cream is evenly spread between the layers. Transfer cake into the freezer and freeze for 30 minutes. Once re-frozen spread a layer of Chocolate Fudge Ice Cream followed by a brownie. Freeze. Add another layer of Mint Chip Ice Cream followed by a cookie. Freeze. Add a layer of Chocolate Fudge Ice Cream followed by a brownie. Freeze. Remove from freezer and quickly frost with cream cheese frosting. Place back into freezer until ready to serve.

    In case I get brave enough to attempt this recipe, I have a question regarding the cake and brownie layers in this cake. Did you use one cookie/brownie recipe and then divide it between three 9″ cake pans? If so, how long (approx.) did you bake the layers?

      Thanks for the question! I did use one box of brownie mix and cookie dough and then divided it into thirds and baked them all evenly. I had to keep a close eye on each layer as I baked it since its hard to tell how long it will take. I would start with 10 minutes and check from there to see how things are going!
