Dark Chocolate Drizzled Cashews

So I have a straight up obsession with cashews. I like them raw. I like them salted. I like them roasted with spices. And I especially like them covered in chocolate. I think I am making up for lost time on the cashew eating front seeing as how I wouldn’t even try nuts until earlier this year. Chocolate chip cookies with nuts? No way. Biscotti with nuts? Not a chance. A salad with nuts on top? Oh my goodness, that is like so unacceptable. But now I’m totally into cashews. I even like the occasional almond. Still not quite ready to dive into walnuts, but I’m confident that one day I’ll get there.

Since my recently developed love affair with cashews, I’ve been snacking on them every chance I get. They are a great for in between meals if you just need a quick pick me up. Plus they have great heart healthy fat in them!

And, now that we are all getting ready to hit the pause button on life and escape into the holiday season, these are the perfect quick treat to bring to friends, co-workers, or family. Or if you need a quick idea for something to bring to a holiday party, look no further, these snacks are the best!

And here’s the easiest part – there is no recipe to follow on this one!! All you need is a few handfuls of cashews, I used organic raw cashews, and some of your favorite dark chocolate. Melt the chocolate according to the package directions and then drizzle it on top of the cashews. Let the dry and then package them up! You could totally use milk chocolate or semi-sweet if that’s more your style too! Simple. Crazy good and delicious. You’ll fall in love with these little bites, trust me!\

  1. This post reminds me that I haven’t eaten cashews in way too long….they’re my favorite! I need a dessert to bring to a holiday party soon and really didn’t want to bring something too decadent/sweet….I’m thinking that these will be perfect. Thanks!
