Culinary School – Week Two – Chicken!

So this week at school we focused on Chicken and all of the different ways of cooking it! It was an intense class – but we made some amazing food. Here are some of the dishes we made…

Chicken Cacciatore – one of my favorite dishes ever!
Chicken Lollipops – now these might sound a bit odd but they were fantastic and I am going to be making these at home for Thomas – he would love them!
Stuffed Chicken Legs with Brunoise of Vegetables with a Sauce Supreme. How pretty does that look?

Steamed Chicken and Vegetable Pouch – this was fabulous – and so healthy! It will definitely be on the menu for my new clients!
Coq au Vin – I had never had this before but it was delicious!
Chicken Paillard with Roasted Vegetables. The roasted red onions were to die for – and I think I ate an entire onion myself – 🙂
Chicken Cordon Bleu – by far one of my favorite dishes of the night because it was stuffed with Gruyere cheese (amazing)
We also had a Whole Roasted Chicken with Gravy and Ma Maison’s Chicken Salad with a homemade mayonnaise. It was a loooong night of chicken chicken and more chicken but I learned so much, loved the team I worked with and was thoughouly exhausted once I got home.

I LOVE Coq au Vin.. it makes my already TRE cool Le Cruset enamled cast iron dutch oven SING! Then you pair fab looking crostini with Cacciatore! Never thought of that one.. anything with guyere (sp) in it is my new best friend (we won’t talk about how my butt and thighs feel about it). And what is it that makes roasted veggies so heavenly? I stopped by to thank you and now I FOLLOW you.. how is that for a deal in MY favor?!
