These Chocolate Chip Pumpkin Cookies are coming out of the archive and let me tell you… I HAVE MISSED THEM.

The Chocolate Chip Pumpkin Cookies are perfect little pillows of pumpkin cookie dough dotted with plenty of chocolate chips and baked to perfection. These are heavenly. You can bake there one of two ways… the recipe as written below will give you a slightly puffy version of these heavenly cookies! Or if you prefer them a little more dense, when you remove them from the oven, use the bottom side of a glass and gently press down. This will make your cookies less puffy and more dense.
And if you need the most perfectly round cookie – here’s a little tutorial!
Need even more pumpkin inspiration to get you through these fall months – I have you 10000% covered:
- Chocolate Pumpkin Cheesecake
- Pumpkin Chocolate Chip Bars
- Spiced Pumpkin Donuts
- Triple Layer Pumpkin Chocolate Chip Cake
- Chocolate Chip Pumpkin Bread
- Pumpkin Cheesecake with Marshmallow Meringue
- Chocolate Chip Pumpkin Muffins

Chocolate Chip Pumpkin Cookies
Ingredients
- 1 cup unsalted butter, at room temperature
- 3/4 cup brown sugar
- 1/2 cup pumpkin puree
- 1 egg
- 2 teaspoons vanilla extract
- 2 1/4 cups flour
- 1 teaspoons baking soda
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
- 2 cups chocolate chips
Instructions
- Preheat oven to 375 degrees F and line two large baking sheets with parchment paper.
- In a stand mixer, mix together butter and sugar until light and fluffy. Beat in pumpkin, egg, and vanilla extract until combined. Then add flour, baking soda, pumpkin spice and salt. Beat on low until the flour is incorporated and then fold in chocolate chips. Refrigerate dough for at least 30 minutes.
- Scoop 2 tablespoons worth of dough into balls onto prepared baking sheets, 12 cookies per sheet. Transfer into the oven and bake for about 12-13 minutes. If you remove them and they are too puffy for you, use the bottom side of a glass and gently press down. This will make your cookies less puffy and more dense.
- Repeat with any remaining dough. Store in an airtight container in the fridge for up to 1 week or for months in the freezer

Subscribed! I am most excited to bake some new gluten free/dairy free pumpkin recipes 🙂 This weekend I tried pumpkin spice pancakes (not exactly baking, but still yummy!) and pumpkin spice muffins. Both were very good!
Just subscribed. Going to be making pumpkin cheesecake very soon.
I’m subscribed, gonna try out this recipe. Planning to bake more cookies instead of cakes for the holiday season.
I subscribed and since I only have an old hand mixer (yikes) I would love to win so I could bake all kinds of holiday cookies!
I subscribed but since I will be house sitting for the holidays (both biggies T- day and December ones) I won’t be baking much. Plus if you add that I am part of a scientific study into taste and am on a low carb diet then baking is off the table this year….. 🙁
I subscribed at YouTube. Cookies! Lots and lots of cookies. And so much else. I make a lot of baked goods and have wanted one of these all my life (and I’m 70!). It would make “grandma-ing” so much easier and help me keep the cookie jar always full (including homemade cookies for my service dog).
I subscribed! I’m most looking forward to baking cookies.
I subscribed 🙂 I love baking and I get overly excited anytime I bake something! Next week I plan to bake sea salt caramel cookies for my friend’s 35th bday! yay to bday! I just had 29th bday and getting a kitchen aid <3 would be the BEST PRESENT EVER! (can't just stop thinking about all the cakes and cookies I could produce with it… yum!)
I subscribed, I am looking forward to baking my homemade mincemeat cookies for my dad. I have made them for him every year since I was 10 years old so for a few years LOL…

I’ve already gotten into the holiday baking and have been baking all things pumpkin the past few weeks – pumpkin cranberry scones, apple pumpkin muffins, pumpkin blondies, mini ginger muffins. I just subscribed, and I can’t pick just one thing I’m excited for! I love baking, holiday or not. During the holidays I will usually make a minimum of 20 different baked goods and divide them between us, family, and neighbors (my out of state aging future father in law and disabled niece usually receive the most 😉 but last year I was 2 months pregnant and having health issues during the whole pregnancy I didn’t get much of anything done for last years holidays or any time this year so far. Now that baby is here and I am getting back into the swing of things I can’t wait to make a ton of stuff this year to make up for the lack of last year!
Gaby, just subscribed to your YouTube Channel. My wife and I are hoping to dive into macaroon making, probably a pumpkin spice with hazelnut icing for fall. That mixer sure would make things easier for her… I mean us… My arm already feels better not having to hold that sad, old handheld mixer. It even gives off that slight electrical fire smell when you use it too long. But I’m rambling, and hoping for a macaroon filled fall made with the ease of an awesome mixer.
I’m a youtube subscriber and I’m most excited to make snickerdoodle cupcakes
