There comes a time once a day where normal people have this thing called breakfast. Sometimes it consists of a bowl of cereal. Maybe a piece of fruit. Perhaps some pancakes or waffles. Or maybe even a cup of yogurt and some granola. A glass of Milk or Orange Juice might be there too. You might think that is perfectly normal, but for me it’s not. I’ve never been a big fan of breakfast (unless its a double chocolate chip muffin), and we all know about my insane addition to anything involving avocados, so I have created what I think is the perfect breakfast. Its really quite simple, and easy, and its by far the best way to wake up in my book! It’s Avocado Toast.

Yup. That’s it. Genius. I’m always the weird one who orders lunch when we go out for brunch. I think its because I just crave that savory deliciousness that I think of when I think of lunch. When I think of breakfast I think of sweets (maybe this is because I grew up eating Cocoa Krispies, Double Chocolate Chip Muffins and Honey Nut Cheerios), which don’t get me wrong, I love my sweets. But I prefer to add my sweets throughout the day, with a cookie or brownie every few hours. So that’s why I have implemented this breakfast Avocado Toast into my life.

There is no recipe for this masterpiece. All you really need is a great piece of bread (I prefer Sourdough). Stick it in the toaster until its just perfectly golden brown. Then in a small bowl you mash up 1/2 an avocado and slather it on top of the toast. Sprinkle it with some coarse sea salt and a grind of fresh pepper and you have got one heck of a breakfast!

And that’s just about it. So go ahead and try it. I promise it will be amazing. Life changing. And maybe on of the most simple breakfasts you have ever had!

  1. I love double chocolate chip muffins as well, but gave them up long ago, much to my dismay. I have never thought of doing something like this for breakfast, but I have wanted to start making my own sourdough, so this may be the perfect opportunity. I have some wonderful smoked sea salt from the San Francisco market that might be delicious here. Thanks for expanding my breakfast options!

  2. I’m totally with you on the breakfast thing. I eat it because I’m supposed to but not because I am hungry for it. I always prefer savory to sweet and even eat my oatmeal with salt instead of brown sugar. I love avocados and I’m sure this would be perfect for me in the morning!

  3. We recently visited Peru, and one of the breakfast staples at the buffet every morning was a plate of thinly sliced avocados, to be placed atop the fresh bread rolls that were also available. Smear them on like butter, and if you have fresh rolls, no toasting is needed.

  4. I agree – a good bread, freshly toasted, then mash more tha a little avocado on to it. A sprinkle of a good salt – and I often add a wee squeeze of lime or lemon juice. Munch on down before the crispy, crunchy bread can get soggy from the additions!

  6. Omg, avocado toast is seriously my FAVORITE meal! I make mine with sourdough also but put a touch of mayo on the toasted bread before mashing up the delicious avocado. YUM!

  9. i’m so not a “sweet” breakfast eater and am a self-proclaimed guacamole addict. as such, i love everything “bad” that was implicated in this case.the avocado toast was delicious and incredibly filling. i would recommend it to everyone.

  10. Yum. REminds me of how we ate breakfast in Chile. They had this wonderful bread that was a cross between a biscuit and a roll, freshly baked. There was always preserves or avocado on the table to spread…and I always had the avocados. So delicious. I may have to relive my Chile trip now.

  11. We ate this all the time when I lived in Chile! Avocado (or palta, as they call it there) spread on a biscuit-y type of bread and sprinkled with lots of salt. I thought it was genius. Thanks for sharing!

  12. This is my favorite, but i like to add balsamic vinegar and lemon pepper, sometimes my dad will make this with a fried egg, so yummy.

  13. I too love avocado for breakfast. but i prefer it with lemon juice, salt, pepper and a bit of fresh grated nutmeg. the nutmeg just give it that special twist mmmmmh yummy

  14. This is probably my death row food. I’ve been eating this as long as I can remember, my grandmother and mom both LOVE avocados, so it’s like my biggest weakness. I love avocado on a poppy bagel with salt & pepper as well.

  15. Ever since I saw this on your site a few months ago, I’ve been making this for breakfast. So glad that avocados are in season now! I bought a couple boxes of Maldon sea salt just to accomodate our new addiction.

    Our favorite bread to use is the ancho chipotle cheese bread from Beyond Bread in Tucson. We buy lots of loaves and freeze them whenever we go down there.

  16. I LOVE avocado toast! I love to put some Sirracha on it as well for a little burn. When I’m feeling decadent, I’ll steam some extra sharp Tillamook cheese (shredded, in a ramekin, in a pot of boiling water until pillowy meltiness ensues), and pour the magma of awesomeness over the Sirracha and avocado on sourdough. WIN.
