Cheesy Guacamole

Ingredients

  • 3 ripe Hass avocados
  • 1/3 cup chopped red onion
  • 1/3 cup shredded cheddar cheese
  • 1/3 cup chopped fresh tomatoes
  • 1/8 cup chopped chives
  • 1/2 lemon juiced
  • 1/2 lime juiced
  • 1 tablespoon chopped jalapeño
  • Kosher salt and freshly cracked black pepper to taste

Instructions

  • Cut the avocados in half lengthwise. Remove the pit from the avocado and discard. Remove the avocado from the skin and place the avocado flesh into a bowl.
  • Add the lime juice, red onion, shredded cheddar, tomatoes, chives, jalapeño, salt and pepper. Mash with a fork until half smooth and creamy. Taste and add more salt and pepper if desired.
  • Serve immediately with tortilla chips

Notes

Here's a tip.... shred your own cheddar. It's way better than the store bought cheddar and it's going to make your guacamole that much better!
