kosher salt and freshly cracked black pepper as needed
Instructions
Cook the farro in water according to the package directions. Once cooked, drain and reserve the grains.
In a large skillet, add the olive oil and butter over medium high heat. Add the leeks and scallions and saute for about 12-14 minutes until the leeks are soft. Add the garlic at the last minute and cook for 1 minute more. Then turn off the heat.
Add the farro to the cooked leek and scallion mixture and stir to combine. Add the parmesan and combine.
Stir in the burrata cheese and season with salt and pepper. Serve as needed.
