Bring a large pot of water to a boil. Once boiling, add the pasta and cook until al dente, making sure to break the pasta up while cooking so it doesn't stick together.
Meanwhile, in a large skillet, coat the bottom with olive oil and heat over medium-high. Saute the shallot and the garlic cloves until fragrant. Add the tomatoes and continue to cook until the skin starts to burst. Season with salt and pepper.
Drain the pasta from the water and add to the skillet. Mix all the ingredients together making sure to coat the pasta in all of the garlic-y oil goodness! Taste for seasonings and adjust if needed. Garnish with chopped chives and serve.
Talk about a simple recipe - this one obviously isn't too complicated - it's more about the WOW factor. And kid would LOVE to see this on Halloween as well as some other goulish foods - like eyeballs or something fabulous like that!
